Wonderful European-Asian fusion dinner at MICHELIN Guide star level with friends at L'Arome, right next to the Schauspiel Frankfurt in Frankfurt's banking district. Chef/ Owner Hải Hoàng Minh worked with Alfred Friedrich, a 2-star Michelin chef, for 10 years. L'Arome is his first own high-end restaurant. There is only 1 menu and you have a choice between 4 (Euro 116) to 6 (Euro 146) courses. The excellent wines we had were all around Euro 70. The wine list is oriented towards blue-chip producers. 3 of us went for 5 courses and 4 for 6 courses, with 10 bottles of wine: Euro 285 per person including tip. 

This was the group's second visit and we will certainly be back soon.

The Frankfurter (Barbara Goerlich)  - UBOWL & L'AROME

Eine Erfolgsgeschichte wie aus dem Märchenbuch schreiben Hai Hoang Minh und seine Frau Giao Nguyen. Mit ihrem Edel-Imbiss UBowl und dem Restaurant L’Arôme begeistern sie Frankfurts Gourmets. Unserer Food-Expertin Barbara Goerlich erzählt das Paar von seinem Start in Deutschland, Wissensdurst und den innovativen Raffinessen der europäisch-asiatischen Küche.

Als Jugendliche aus Vietnam nach Deutschland gekommen, sind Hai Hoang Minh und seine Frau Giao Nguyen heute stolze Inhaber zweier erfolgreicher Restaurants in Frankfurts Innenstadt: UBowl und L‘Arôme. Erstmals aufmerksam wurden Foodies auf den heute 39-Jährigen, als in der Frankfurter Botschaft am Westhafen auf einmal spannende euro-asiatische Kreationen auf die Tische kamen. Virtuos verknüpfte Küchenchef Hoang Produkte, Aromen und Garmethoden seiner alten und neuen Heimat.

BOWL ADVENTURES

Das kulinarische Erfolgsstück des Gastronomen-Paars begann mit einem innovativen Konzept. Sie planten, die angesagten – und sehr gesunden - Poké Bowls mit besten Zutaten und asiatischen Akzenten in einem Edel-Imbiss umzusetzen. Knapp drei Jahre reüssiert das UBowl nun an der Töngesgasse und war umgehend ein Erfolg. Wie raffiniert so ein Schüssel-Erlebnis ausfallen kann, lässt sich hier auf Gourmet-Niveau schmecken. Was Hoang in Schüsseln schichtet, hat Klasse, zumal er bei Frische und Qualität keine Kompromisse eingeht. Die Signature Bowls vereinen Süße, Säure, Schärfe und Cremigkeit, raffinierte Saucen halten die kühn klingenden Zutaten zusammen. Bei der „U-Special-Bowl“ etwa finden gebratenes Rindfleisch, Tobiko-Kaviar, Kimchi, Gemüse, Annas, Kokos zusammen, getoppt mit Quinoa-Pops und fruchtiger Maracuja-Erdnusssauce. Klingt verwegen, schmeckt köstlich – und sieht auch noch gut aus. Fazit: Diese Bowls machen süchtig.

TRUE TO ITS NAME

Edel-Imbiss ok, doch der Traum der Hoangs von einem Fine-Dining-Restaurant besteht weiter. Mit ihrem lang geplanten Restaurant L’Arôme setzen die beiden noch einen drauf. Das stilvolle Restaurant am Willy-Brandt-Platz, gegenüber den Städtischen Bühnen bietet zwei Menüs – eines ist vegetarisch. Darin verknüpft Hai Hoang auf Basis der klassischen Küche virtuos Produkte, Aromen und Garmethoden seiner alten und neuen Heimat. Zum kurz gegarten Lachsbauch mit Couscousperlen macht sich Basilikumschaum farblich und geschmacklich hervorragend. Perfekt und mit deutlichen Röstspuren liegt saftiger Seeteufel auf Currysauce mit Muscheln, Mungobohnen, „Elefantenohr“ und Okraschotenpüree. Hohe Erwartungen erfüllen auch die Desserts, vegetarisch mit Grapefruitsorbet und Kokos auf gestocktem Sojabohnensaft oder Erdbeeren mit Wasserkastanie und getrockneter Crème fraîche.

SOMMELIÈRE VALERIE POULTER

Viel Holz, elegantes Petrolblau und Tapeten mit exotischen Motiven untermauern das Einrichtungskonzept nach der japanischen Harmonielehre des Wabi Sabi, das sich über zwei Ebenen erstreckt. Im Erdgeschoss können Gäste Hoang und seinem Team bei der Arbeit an der Küchentheke zusehen. Eine Wendeltreppe höher sitzt man mit Aussicht auf Theater und Skyline auf Stühlen mit Wiener Geflecht an polierten Holztischen, umsorgt vom aufmerksamen Service unter der Leitung von Valerie Poulter. Sie ist in der Szene aus dem Chalet 18 und dem Français im Steigenberger Frankfurter Hof bekannt und baut als Sommelière auch das Angebot vorwiegend deutscher Weine weiter aus. „Eine Terrasse ist bereits genehmigt“, freut sich Hoang. Derzeit ist nur abends geöffnet; spezielle Theater-Menüs und Lunchangebote sind angedacht.

HIS FATHER RECOGNISED THE TALENT

Der Mauerfall hatte nicht nur für Menschen in Deutschland und Europa unmittelbare und mittelbare Folgen. Die Welt wurde eine andere, was sich für den 17-jährigen Hai Hoang Minh als Glücksfall erwies. Obwohl sein Vater lange Jahre als Bauingenieur in der damaligen DDR tätig war, konnte er erst nach dem Mauerfall seine Familie aus Nordvietnam nach Thüringen holen. Für den jungen Vietnamesen waren es harte erste Monate in einem nicht gerade fremdenfreundlichen Umfeld. „Neues Land, neue Sprache, keine Freunde,“ erinnert er sich. Er biss sich durch, hatte bald Freunde, lernte die Sprache, schaffte nach nur anderthalb Jahren den Realschulabschluss und wollte wie sein Vater Ingenieur werden. Doch Hoang Senior, der inzwischen ein asiatisches Lokal in Gotha führte, erkannte in seinem Sohn den geborenen Koch. „Mein Vater hatte ein gutes Auge und hat mein Talent erkannt“, schmunzelt Hai. Durch Vermittlung eines Freundes absolvierte er drei Jahre im Nikko Hotel Düsseldorf in einer streng hierarchisch organisierten Küche. „Dort wurde gemacht, was der Chef sagt“, bilanziert Hoang die Zeit, in der er beschloss, den Beruf von Grund auf zu erlernen.

LEARNING FROM THE BEST

Als Segen für hiesige Foodies erwies die Wahl seines Ausbildungsbetriebs, das Landhaus Waitz in Lämmerspiel. Dadurch schlug Hai Hoang Wurzeln im Rhein-Main-Gebiet. Ein Wanderjahr führte den jungen Koch dann zum legendären Albert Bouley ins Waldhorn nach Ravensburg. Als einer der ersten Köche hierzulande integrierte Bouley asiatische Elemente in seine Sterneküche und gab sein Wissen über die „grande cuisine“ an Hoang weiter. Es folgten acht prägende Jahre an der Seite von Sternekoch Alfred Friedrich (heute Wirtshaus Zur Golden Kron). Zuerst im Restaurant Zarges an der ‘Fressgass‘, das längst Geschichte ist, und danach im Lafleur am Palmengarten in der verantwortlichen Position des Souschefs. Der wissensdurstige Hoang lernte, ganze Tiere und nicht nur deren Edelteile zu verarbeiten, und machte Bekanntschaft mit unbekannten oder vergessenen Zutaten. Nach der Prüfung zum Küchenmeister trat Hoang seine erste Position als Küchenchef im Edelgasthof Linde in Albstadt an. Dort gefiel es ihm zwar ausnehmend gut, wäre es auf der Schwäbischen Alb nur nicht so verflixt kalt gewesen. Daher zog es die Hoangs nach der Geburt der ersten Tochter zurück an den Main. Das Märchen konnte beginnen. In der Frankfurter Botschaft schickte Hai Hoang seine Gäste auf genussvolle Gaumenreisen von Europa nach Asien und zurück. Drei Jahre und doch nur eine Etappe auf dem Weg zu Hoangs eigentlichem Ziel, der Selbständigkeit im eigenen Restaurant.

Mit Ehefrau Giao Nguyen hat er zudem eine engagierte Geschäftspartnerin an seiner Seite, die als Neunjährige aus Vietnam nach Deutschland kam. Auch sie ist „vom Fach“, absolvierte ihre Ausbildung im Grandhotel Hessischer Hof und war mehrere Jahre im Restaurant Lafleur tätig. Mittlerweile hat sich Giao aus der Betriebsführung etwas zurückgezogen, widmet sich den beiden kleinen Töchtern und verantwortet Buchhaltung und Administration der beiden Betriebe mit mittlerweile knapp einem Dutzend Mitarbeiter:innen.

Louie is well-connected in the Frankfurt gastro-scene. One of his favorite places for lunch is Bella Donna in Sachsenhausen, close to Apfelwein Adolf Wagner and Das Gemahlte Haus. 

I joined Louie for lunch at Bella Donna last Thursday as did Harry Hotze, lawyer and a long-time friend of Louie.

Trip Advisor: The restaurant is small, tiny tables, difficult parking (go by taxi) and it is almost inevitable to exchange glances with other guests due to the proximity of tables but the food and attentive service are a great surprise. If you have never been to an Italian restaurant that cook great pasta and great pizza, you will find here. After a week of typical German restaurants, we decided to elect Bella Dona for the last two nights we spend in Frankfurt. We can hardly wait to go back! We strongly recommend the place for those who care for great food, excellent Italian wine, friendly service and don't mind about loud voices aroud. Reservation is key. A. Gaspar

Trip Advisor: The food is good, the portions, from an American perspective, perhaps a little small. The staff is great, and they will remember you the next time you visit- even if it is only a few times a year. I especially enjoyed the family atmosphere. Not just the customers, but, the staff. They smile and will chat with you (in mixed Italian-English-German, at least with me) and then you hear them quietly go in the kitchen and shout to each other in Italian (very much like family kitchens from my youth) and then they come out again all pleasant and nice. I have been there many times where it was full and no seating was available...so make a reservation on a weekend.

Trip Advisor:  Bella Donna, a family owned and managed place, tiny, be prepared to sit very close to each other, where simplicity is key and money is the boss. I mean money, hard money, cash money because yes, in times of transparent bookkeeping and traceability of credit cards, this place accepts the real deal, hard currency, cash, or I suspect even golden coins of the Roman empire. The kitchen itself is simple, humble, focus on few ingredients. Traditional? Yes. Home Cooking? Also. But that's where it stops. It is all quite basic and menu shows quite some dishes with "price of the day"......which makes the Pugliese cuisine in this place rather expensive, for what you get, simple ingredients, like at home.

Two domaines under one roof: Visit at Domaine Gadais Père et Fils and Domaine de la Combe/ Pierre-Henri Gadais in Saint Fiacre-sur-Maine, Muscadet Sévre et Maine, Pays Nantais, with Owner/ Winemaker Christoph Gadais

Domaine Gadais Père et Fils exists as a mixed farming estate since before the French Revolution. In 1947 Louis Gadais decided to concentrate only on wine production. In 1958 they wrote history when Franck Schoonmaker, an importer of high-quality French wines paid them a visit and started to import Gadais Muscadet wines into the US. 

Today, it is Christoph Gadais, fifth generation, and his son Pierre-Henri Gadais, great-grandson of two brilliant Loire winemakers – Louis Gadais in the Muscadet region and Henri Bourgeois in the Sancerre region (whom we will visit on the last day of this wine tour) who are running the domaine. 

In addition, Pierre-Henri Gadais started his own domaine, Domaine de la Combe. 

Domaine Gadais Père et Fils wines are imported by Peter Weygandt and Domaine de la Combe by terresblanchewines of Cason Love in Richmond, Virginia, a former employee of Peter Weygandt.

The beginning of the story

A long time ago, besides their own professions, people in rural France all farmed to provide for their families. The polyculture that took place in the countryside at the time very often allowed for a small amount of wine production for day-to-day consumption.

Because of this, when we traced back our family tree we found an ancestor who was a ploughman before the French Revolution. But it was Louis Gadais, a gardener's son at the time, who decided in 1947 to concentrate his activity on wine production. An observant man with an unmatched palate, and a businessman at heart, his ambition was to do more than just produce an average wine. For him, going from tending vines to commercial bottle sales was the realisation of his passion. He was one of the first winemakers in Nantes to bottle his wines: at that time, winemakers produced wine in bulk and sold it all at the cooperative. It was only a matter of time before his wine would be marketed and exported.  

The Development of the Estate with Michel & Marcel

In 1958, Franck Schoonmaker, a trailblazer in the importation of high-quality French wines, paid a visit to Louis to purchase his wines. The following year, Domaine Gadais wines were already appearing on tables in New York.

The story continues with the arrival of Louis’ sons Michel and Marcel, who would go on to develop the estate. The acquisition of coveted land in La Faubretière in 1973 further improved the quality of the wines. Thanks to low yields, contrary to the trend at the time, the quality of their wines was recognised on an international scale, by renowned importers such as Robert Chadderdon in the USA.

The diversification of the portfolio with Christophe

In 1994 Christophe Gadais, having returned from work experience in Sancerre and outside of France, took the reins of the estate and developed the production portfolio, which had until then been composed of only one wine, a blend.

Committed to adding value to the estate’s agricultural heritage, he decided to diversify the portfolio. The Grande Réserve des Moulins was created in the 94 vintage: at the time, it was a selection from the terroirs of Les Masses and La Faubretière.

The legendary cuvée Vieilles Vignes was launched in the 96 vintage, made from vines in Ménardières, and the Perrières Monopole launched in the 2009 vintage also contributed to the development of a coherent and diversified range of Muscadet.

A new approach to the wines with Pierre Henri

In 2016, Pierre-Henri Gadais, son of Christopher and, notably, great-grandson of 2 winemakers from the Loire – Louis Gadais in the Muscadet region and Henri Bourgeois in Sancerre – returned to the estate.

After studying viticulture and winemaking in Burgundy and Bordeaux, he decided to travel to gain innovative experience abroad. He travelled to California, Australia, England, and New Zealand, but it was in Switzerland that he gained an interest in organic and biodynamic agriculture: a new approach to wine, with the objective of respecting raw materials and limiting interventions to reduce the addition of sulphur.

Today, the story continues with the construction of a semi-underground, gravity-fed cellar. There is no shortage of projects to continually showcase our terroir, our expertise, and our varietal wine. 

Domaine de la Combe (terresblanchewines)

In the village of Saint-Fiacre-sur-Maine, on the banks of the Sèvre, not far from its union with the Maine, Pierre-Henri Gadais of Domaine de la Combe is producing some of the most exciting wines coming out of the Muscadet region today.

Descended from the Bourgeois family (Domaine Henri Bourgeois) in Sancerre on his mother’s side and the fifth generation of the Gadais family (Gadais Père et Fils) to produce wine from the rolling hills surrounding Saint-Fiacre-sur-Maine, Pierre-Henri was perhaps destined to be a vigneron. In the Muscadet region the Gadais family has long been synonymous with high quality production, with legendary importers Frank Schoonmaker, Robert Chadderdon, and now Peter Weygandt bringing the wines of Gadais family to the United States.

Growing up in the vines and cellar of his father and grandfather, Pierre-Henri received quite the education from a very early age. It would have been easy to return to the family Domaine after earning his Viticulture & Enology degree in Burgundy, but Pierre-Henri chose a different path. To gain a better understanding of the international wine trade, he studied Wine Business in Bordeaux for 2 years, followed by a year in California working in wine distribution. After the completion of his studies, Pierre-Henri worked for several years as an apprentice winemaker in Australia, Switzerland, Burgundy, Pomerol, Sancerre, and back in Muscadet at Domaine de la Pépière.

Finally in 2016 he returned to Saint-Fiacre-sur-Maine to work with his father Christophe at Gadais Père et Fils. However, simply coming into the family business was not enough for the talented young vigneron and soon Pierre-Henri was looking to start a project of his own. The perfect opportunity came in the form of Les Grands Presbytères, a nine-hectare Domaine started in the 1920’s by the Marzelleau family. In 2009 Nelly Marzelleau, the current generation, was looking to step back from the day to day running of Les Grands Presbytères and contracted with her neighbor, Christophe Gadais, to farm the vineyards and make the wines. From the 2009 to 2015 vintage, Christophe Gadais made the wines for the Marzelleau family under the Les Grands Presbytères label. In 2016, with the blessing of his father, Pierre-Henri purchased the vines and the cellar, rechristening it Domaine de la Combe.

Immediately Pierre-Henri began the task of enhancing the unique terroir and reorganizing the Domaine towards the production of multiple quality-oriented cuvees. He later added some adjoining parcels, bringing the total to 15 hectares. Domaine de la Combe is unique in that all the Domaine’s vines are in a single block. The vines lie within the lieu dit of La Pétière, and rest on a gentle hillside known as the Butte de la Combe. There are 3 distinct terroirs in the Butte de la Combe: orthogneiss on the summit, gneiss on the southern slopes, and schist on the northern slopes. The Domaine has a good mix of young and old vines with the oldest being planted in the 1950’s and youngest as recent as 2016. The spraying of herbicides and pesticides was stopped in 2016 and the conversion to Organic viticulture began in 2017. Work in the vines is done according to the lunar cycle and, as of the 2021 vintage, all the Domaine’s holdings are certified Organic.

In the cellar, much is done in a traditional way with vinification and long ageing on the lees in subterranean glass tanks. However, there are also notable differences. Unlike many of his counterparts in the region who inoculate with cultivated yeasts, Pierre-Henri relies solely on wild indigenous yeasts for a spontaneous, natural fermentation. Work in the cellar is done according to the lunar cycle, and only one sulfur addition is made at the completion of alcoholic fermentation. A light filtration is made prior to bottling to avoid further sulfur additions. Pierre-Henri has also begun to experiment with oak ageing (Vigne de l’Astrée), light skin contact (Vendange Nocturne), and vinification without the additional of sulfur (Zeste).

Only in his early thirties, it’s exciting to think about where Pierre-Henri will be in five, ten, and twenty years. He is constantly experimenting and pushing boundaries, but also firmly rooted in the tradition of his forebearers. It’s an honor to know Pierre-Henri Gadais and to sell his wines.

we  checked in at our hotel in Angers, where we spent 2 nights.
 
Hôtel d’Anjou in Angers, a charming, recently updated 4-star hotel in the heart of the city of Angers welcoming sophisticated guests since 1857. New additions to the hotel are the restaurant in an exceptional space decorated with mosaics dating from the 1930s and the great spa area with sauna, hammam, and Nordic bath.

We went out for dinner to Les Petits Près.
 
Owner/ Chef Samuel Albert is a "Top Chef France" winner. This time, Chef Samuel Albert was not in the kiktchen, but last time, Annette and I were there, we had the pleasure of a long interaction with Chef Samuel Albert as we were sitting at the kitchen counter of the restaurant and Chef Samuel Albert was there. Samuel Albert is very much into natural/ organic/ biodynamic wines and the restaurant was packed with winemakers showing their wines at the Salon des Vins Grenier Saint Jean, a wine fair with natural wine producers at the Le Grenier Saint Jean in Angers.

Chef Samuel Albert/ Cointreau

Samuel Albert is originially from Angers and worked several years in Tokyo before winning in 2019 the French famous food competition : "Top Chef".

Former Belgium embassy chef in Tokyo, Samuel traveled a lot to enhance his cooking knowledge and discover cultures. With inspirations from China, Japan and Australia, he offers a fusion style of cooking between his french roots and twists from all over the world.

In November 2019, after the show, he finally opened his restaurant in his birthplace named Les Petits Prés.

Samuel Albert brings dynamism and modernity to the city, particularly in this first address, a modern-day brasserie in the central square. The menu is clear, varied and based on referenced and traced products (Obsiblue shrimp, Rougier foie gras, Label rouge salmon). And the execution doesn't fail, with mackerel terrine with celery mousse and salad, nashi and truffled mayo, conchiglionis stuffed with ricotta spinach, Label rouge Maine poultry with dried fruit and tandoori poultry juice, all at tight prices, right through to the dessert of dacquoise, creamy fromage blanc, kiwi and chartreuse... A good daily menu at €28, with well-trained, efficient service.

2024 Loire by ombiasy Wine Tours, led by Annette Schiller, took place from Sunday, June 9 to Thursday June 20, 2024. The tour started in Nantes and ended in Sancerre. 

Anjou-Saumur 

Today, we scouted out the Anjou-Saumur wine region. The maritime influence fades and one can sense the shift towards a continental climate. Anjou and Saumur’s most famous grapes are Sauvignon Blanc, Chenin Blanc, Cabernet-Franc. However, we also tasted fantastic wines made from a range of other grapes mostly unfamiliar to us until now.

Two subregions meet and here are the most prominent wines of the regions:

Anjou: 

dry white wines: Sauvignon Blanc and Chenin Blanc, where Savennières is the top region for Chenin Blanc; noble sweet Chenin Blanc along the Layon river, a tributary of the Loire; 

red wines: Cabernet Franc, Gamay and blends; the well-known Rosé d’Anjou, mostly a blend of Cabernet Franc and Grolleau.

Saumur: 

red wines from Cabernet Franc, where Champigny is the most prominent region; 

and for the bubbles afficionados: Crémant de Loire.

In the morning we explored the AOP Savennières appellation.

The fact that great Chenin Blanc, bursting with power, depth, elegance, and freshness, are produced in the Loire Valley, in particular in Savennières, is not on everyone’s radar. These wines compete with the great Chardonnays of Burgundy. The reputation comes from some seriously strict regulations in the AOP Savennières concerning vinification: Chenin Blanc is the only grape allowed in the region, harvesting must be by hand, and mandatory low yields guaranty optimal flavor and ripeness in each grape.

Château d’Épiré is one of the oldest and most prominent wine estates in the Loire Valley. It was founded in the 17 th century and has never been sold. 

Originally the castle and wine estate belonged to the Pons de Las Cases family. (For the history buffs among us: after Napoleon was shipped to the island of St. Helena, he dictated his memoires to Emmanuel Pons de las Cases.) The widow of Emmanuel Pons de las Cases was childless and had no heirs. When she died in 1882 she bequeathed the castle and wine estate to her closest friend Théophile Bizard. He settled down in Épiré and continued with the wine production tradition. 

Today the fifth generation, Paul Bizard manages the estate. They farm 25 acres in the best part of the Savennière appellation, planted with Chenin Blanc. 

The small village of Savennières is perched on a rocky plateau 40 meters above the Loire river. The vineyards slope down in a perfect south-southwest exposure.

The estates winemaking and storage facilities are in a unique location: a half buried underground roman-catholic church, built in the 12 th century by Cistercian monks, serves as perfect facility. The one meter thick walls keep the temperature stable inside and year around. 

Château d’Épiré produces 3 top dry cuvées, which are all quite different. The mainstream “Château d’Épiré” is fermented and matured in stainless steel. The “Cuvée Spéciale” comes from a ½ acre parcel of unusual black stones terroir and is fermented and matures in old barriques. The “Hu-Boyau” comes from the oldest plot and is fermented and matured for 9 months in 18 year old oak barrels undergoing malolactic fermentation.

Winemaker/ Owner Paul Bizard was busy in the wine cellar while we were there. After a peak at the winemaking facilities, an employee took us on quite long vineyard walk, where we had a magnificient view of the whole reagion. The visit ended with a tasting in the tasting room.

Paul Bizard, the new generation in charge at this historic Loire Valley property, has wasted no time in showing his youthful energy and ambition since taking over management. His very first step was to initiate an organic conversion, a monumental challenge in a place defined by a stormy oceanic climate and unforgivingly rocky soils. This latest release suggests his work is already paying off, as it stands among the most expressive young Savennières Epiré has bottled. The fleshiness on the palate reflects the Loire’s sunny 2022 summer, yet it finishes dry and chiseled as ever, with lingering notes of acacia blossom and stone. —Tom Wolf

2024 Loire by ombiasy Wine Tours, led by Annette Schiller, took place from Sunday, June 9 to Thursday June 20, 2024. The tour started in Nantes and ended in Sancerre.

The visit at Château des Vaults, Domaine du Closel in Savennières, Anjou, was quite extensive. Owner Evelyne de Pontbriand was host for the whole visit. We even had lunch with her with a private chef in her private dining room, which will be covered in a separate posting.

We started out with a walk to the vineyards. We walked back to the wine cellar where we had a tasting from barrel. Then, we sat down in the private library of Evelyne de Pontbriand for the aperitif with a tasting of 3 wines. The visit ended with a high-end lunch hosted by Evelyne de Pontbriand in her private dining room. The lunch will be covered in a separate posting.

Domaine du Closel in Savennières, Anjou, is represented by Louis Dressner in the USA.

Château des Vaults, Domaine du Closel in Savennières, Anjou

Domaine du Closel is located in the appellation of Savennières and produces some of the most beautiful Chenin Blanc wines. The property, the impressive Château des Vaults, was first mentioned in 1495. The château we see today was rebuilt in the 19 th century and the park was created in 1850. At that time the family of Emmanuel de Las Cases, biographe of Napoleon, inherited the château and a line of female winemakers and estate managers was born. 

In 2001 Evelyne de Pontbriand, a literary scholar, who had lived and worked in the US and Germany, took over the reins. The 35 acres of vineyards are spread out on the most western hill of Savennières and the best plots are Les Caillardières and Clos du Papillon. Evelyne de Pontbriand is a lover of botanics and nature. She immediately started the conversion to organic and biodynamic viticulture and today the domain is certified organic and biodynamic by Ecocert and Demeter. Evelyn’s goal is to make wines that are expressing their origins. She says: “Thanks to grassing and plowing, the life of the soil is respected, the soil’s micro-organisms are active: oxygen comes into action allowing maximum exchanges between soil and vine. This is how we obtain the famous terrior effect: combination of soil, the precocity of its warming, plant material, and light.”

Domaine du Closel (Louis Dressner)

Château des Vaults in Savennières dates back to 1495, and was inherited by Michèle de Jessey in 1962 from her childless aunt Madame du Closel. Michèle and Jacques de Jessey turned the small family estate into Domaine du Closel. The entire vineyard is located on the most western hill of Savennières and includes some of the best parcels in the AOC: Les Caillardières and Clos du Papillon. The topsoil is shallow, very warm and consists of purple/green schist and sandstone enriched with volcanic rocks (quartz, phtanites, ryolites and spilites) in the best areas.

Evelyne de Pontbriand, Michèle and Jacques' daughter, took over the estate in 2001 after a first career of teaching French literature to adults all over the world. As a lover of botanics and nature, she quickly adopted organic viticulture, which continues to be an experimental learning process. She is constantly searching for cultural practices best adapted to the austere terroirs of Savennières and has deeply changed vinification practices in the cellar. Vinification is done very naturally and with indigenous yeasts; sulfites are only added in tiny doses when needed. The wines are raised on lees from 12 to 26 months. The rhythm of fermentation is always respected.

Today the entire estate has been converted to organic and biodynamic practices in order to best express the different terroirs, each producing unique, original and delicious wines. With the help of a Belgian geologist Valerie Closset, all of her parcels have been inventoried and analysed to understand them better (which ultimately led to each cuvée sharing the name of the parcel it came from). A lot of energy has recently been focused on understanding and dealing with fungal illness in the vines. For esca, replacements are done in two phases: the first consists of planting the rootstock. 

About two years later, a selection massale of Chenin is grafted from a healthy vine. New plantations are done with material from Lilian Berillon, the first and only organic pépinieriste in the world.

The other experiments have focused on pruning: new plantations are pruned in the ancient style of gobelet, allowing the vine to grow bunches all around and have more exposure to sun and wind. Instead of being cut, the growing branches are now gently wrapped around the top wire. Evelyne believes that foliage thinning is traumatic to the vines, as leaves are the plant's vital organs. She has quickly noticed a change in the aromatic palate of the wines. Much focus has also been dedicated to soil work. Different plants, such as cereals and cloves, have been used as green fertilizers; the idea is to let indigenous vegetation grow in order to reestablish an authentic biodiversity in order to help fight insects and pests.

When not making delicious wines, Evelyne enjoys pairing them with her friend's cheeses, cooking the garden’s vegetables with Loire fishes, reading, travelling to visit other vineyards, and promoting the Savennières AOC (of which she is president).

The 57th American Wine Society National Conference will be held November 1-3, 2024 at the Benton Convention Center in Winston-Salem, North Carolina. Attendance is expected to be around 800 wine lovers from all over the USA.

The American Wine Society

The American Wine Society was founded in 1967 as a non-profit, educational, consumer-oriented organization for those interested in learning more about all aspects of wine. On October 7, 1967, around 200 grape growers, home winemakers, and wine lovers gathered at Dr. Konstantin Frank’s vineyard on Keuka Lake near Hammondsport, NY for the AWS’ initial meeting.

In December of the same year, the thirteen charter members, led by Founder Dr. Konstantin Frank, met to determine the organization structure of AWS and elect officers. Now in its 49th year, the American Wine Society is the largest consumer based wine education organization in North America. Membership is open to anyone interested in wine and over 21 years of age.

In the early days, AWS members were located primarily in the eastern part of the country. As the society grew , we established chapters throughout the eastern U.S., then into the south and Midwest, and finally into western states. Today, the American Wine Society has over 5,000 members in 45 states and 120 chapters across the U.S.

Each November the Society hosts a three-day national conference with two full days of nearly 50 educational seminars to choose from. Winery owners, wine educators, and renowned wine makers are selected to present sessions during this national event. In addition, a program educating members to become AWS certified wine judges is conducted on the day preceding the seminars.

Discovery of the Off-the-Beaten-Path Wine Regions of France

Abstract: In 2020 France was number-one worldwide in wine production (International Organization of Vine and Wine (OIV), 2023). There are 11 wine regions and 363 appellations in France. The image of France as producer of high-prized, highly sought-after wines from the five most-known regions: Burgundy, Bordeaux, Rhône, Loire and Champagne, is spread across the globe. But what about the other regions? These regions do not get the same fame and press coverage but deserve just as much recognition. We will explore six undiscovered and overlooked wine regions that showcase unique wines, with excellent quality and value across the board. We will start in the Lorraine, move to the Jura, travel to Cahors, take the boat to Corsica, explore the Garonne and Lot, and finish in the Pyrenees mountains of the Basques country, in Irouleguy.

Germany’s Perfect Home for Pinot Grapes

Abstract: The 13 wine-growing regions in Germany are spread across the country like a picture. Only in these different regions can the different grape varieties find what they need: the right soils and sheltered locations facing the sun. Germany has been known in the U.S. mostly for its delicious Rieslings. However, because of Germany’s latitude, ranging from 48.5° to 51°, the Pinot grapes also discovered perfect growing conditions here. This session will examine examples of the top 3 Pinot grapes: Pinot Blanc, Pinot Gris, and Pinot.

2024 Loire by ombiasy Wine Tours, led by Annette Schiller, took place from Sunday, June 9 to Thursday June 20, 2024. The tour started in Nantes and ended in Sancerre.

The visit at Château des Vaults, Domaine du Closel in Savennières, Anjou, was extensive.

We started out with a walk to the vineyards. We went back to the wine cellar where we had a tasting from barrel. Then, we sat down in the private library of Owner Evelyne de Pontbriand for the aperitif with a tasting of 3 wines.

The visit ended with a high-end lunch hosted by Evelyne de Pontbriand in her private dining room.

Domaine du Closel in Savennières, Anjou, is represented by Louis Dressner in the USA.

Domaine du Closel (Louis Dressner)

Château des Vaults in Savennières dates back to 1495, and was inherited by Michèle de Jessey in 1962 from her childless aunt Madame du Closel. Michèle and Jacques de Jessey turned the small family estate into Domaine du Closel. The entire vineyard is located on the most western hill of Savennières and includes some of the best parcels in the AOC: Les Caillardières and Clos du Papillon. The topsoil is shallow, very warm and consists of purple/green schist and sandstone enriched with volcanic rocks (quartz, phtanites, ryolites and spilites) in the best areas.

Evelyne de Pontbriand, Michèle and Jacques' daughter, took over the estate in 2001 after a first career of teaching French literature to adults all over the world. As a lover of botanics and nature, she quickly adopted organic viticulture, which continues to be an experimental learning process. She is constantly searching for cultural practices best adapted to the austere terroirs of Savennières and has deeply changed vinification practices in the cellar. Vinification is done very naturally and with indigenous yeasts; sulfites are only added in tiny doses when needed. The wines are raised on lees from 12 to 26 months. The rhythm of fermentation is always respected.

Today the entire estate has been converted to organic and biodynamic practices in order to best express the different terroirs, each producing unique, original and delicious wines. With the help of a Belgian geologist Valerie Closset, all of her parcels have been inventoried and analysed to understand them better (which ultimately led to each cuvée sharing the name of the parcel it came from). A lot of energy has recently been focused on understanding and dealing with fungal illness in the vines. For esca, replacements are done in two phases: the first consists of planting the rootstock. 

About two years later, a selection massale of Chenin is grafted from a healthy vine. New plantations are done with material from Lilian Berillon, the first and only organic pépinieriste in the world.

The other experiments have focused on pruning: new plantations are pruned in the ancient style of gobelet, allowing the vine to grow bunches all around and have more exposure to sun and wind. Instead of being cut, the growing branches are now gently wrapped around the top wire. Evelyne believes that foliage thinning is traumatic to the vines, as leaves are the plant's vital organs. She has quickly noticed a change in the aromatic palate of the wines. Much focus has also been dedicated to soil work. Different plants, such as cereals and cloves, have been used as green fertilizers; the idea is to let indigenous vegetation grow in order to reestablish an authentic biodiversity in order to help fight insects and pests.

When not making delicious wines, Evelyne enjoys pairing them with her friend's cheeses, cooking the garden’s vegetables with Loire fishes, reading, travelling to visit other vineyards, and promoting the Savennières AOC (of which she is president).

Le Chenin (Gault&Millau 12.5/ 20)

At the foot of the church, this charming bistro keeps its promise: you're in Savennières, and the chenin is waiting for you! The welcome sets the mood for a chef's cuisine that knows the sweet music of well-personalized local recipes: low-temperature smoked eel, garden salsify, miso, radish and hollandaise with bone butter, beautifully technical and flavorful; farmhouse pork chop with hazelnut butter, vegetable casserole and seasonal mushrooms, a well-executed classic; correct chocolate-textured dessert and coffee-glazed parfait. The cellar is very much oriented towards local products, and the young staff are professional and committed to bringing life to the house and the village.

Maïté Verriez et Arthur Favé étaient salariés depuis 2018 au Chenin, ils en sont devenus les nouveaux exploitants depuis le 1er juillet 2021. Le couple a son équipe en salle et en cuisine et leur dynamisme ne manque pas à l’appel ! Laissez-vous tenter par Le Chenin
 
« J’ai fait un CAP cuisine en alternance à Saumur. J’ai travaillé ensuite aux Dames de la Loire (anciennement la Taverne d’Antoine) à Saumur, puis avec ma compagne Maïté, on a monté une sandwicherie dans la Doutre «la Casa Jerico». On est ensuite parti voyager à droite à gauche et notamment au Brésil dont je suis originaire. En revenant, je suis allé travailler aux Terrasses de Saumur où j’ai pris la place de chef au Bon Marché où je suis resté deux ans. En parallèle, on a commencé à beaucoup jardiner et à s’essayer à la permaculture. On a récupéré un jardin de 1800m2 et ça a beaucoup influencé ma cuisine. On est très proches de nos producteurs, c’est une symbiose. On s’est installé par ici en 2018 car nous sommes devenus salariés du Chenin et nous avons repris le restaurant en 2021.

2024 Loire by ombiasy Wine Tours, led by Annette Schiller, took place from Sunday, June 9 to Thursday June 20, 2024. The tour started in Nantes and ended in Sancerre.

the château in Angers was the second one we visited on the tour. The main attraction of this château is the exhibit of the Apocalypse Tapestry, listed as UNESCO World Heritage historic monument.

Angers

Although Angers is an Antique city, the Middle Ages are one of the periods to have marked it the most. When wandering the old town, you’ll become aware of a strong medieval influence in the form of charming, cobbled streets, half-timbered houses, the Saint-Maurice cathedral and monuments built in the Angevin Gothic style. Angers is also the place to learn more about the wines of Anjou, either at the Maison du Vin or at the city’s wine bars.

It says much for the way Anglo-French history is entwined that Angers holds almost as significant a place in the history of England as that of France. 

Angers was the seat of the Plantagenet (or Anjou) dynasty, and for over 300 years English monarchs had Angevin blood, from Henry II in 1154 to Richard III in 1485. The Angevin Kings of England had strong claims to the French throne, which eventually plunged the two nations into the Hundred Years War. 

The Duchy of Anjou was reclaimed by the French crown early in the 13th century. Angers became the capital of this wealthy region and a centre of French intellectual and cultural life during the 15th and 16th century. During the French Revolution Angers was one of the strongholds of the Republic.

A siege of the city in 1793 by overwhelming numbers of Royalist troops was repelled from behind the very castle walls you see today. 

Château Angers

Construction of this mighty fortress and castle started in 970 to protect the Anjou region from any invasion coming from the north from Normandie. You will feel tiny when you stand before this imposing Medieval fortress with its 17 defensive towers. 

Apocalypse Tapestry

The main attraction of this castle however is the exhibit of the Apocalypse Tapestry. This incredible monumental medieval work – designed to be transported from place to place – is the largest set of tapestry known to date. It was commissioned by Louis I, the Duke of Anjou in 1373 and it took seven years to finish. The tapestry describes the story of the Apocalypse from the Book of Revelation in colorful scenes in 74 pictures: 103 meters long, 4.50 meters high, 74 scenes, virtuoso weaving, striking details, expressive characters, a fantastic story evoking wars, pollution, disease, famine, death, but also hope: an encounter with a masterpiece unique in the world.

we walked over from the castle to the cente of town and had dinner at the Brasserie du Ralliement, another restaurant owned and run by Top Chef France 2019 Samuel Albert. 

Brasserie du Ralliement (Gault&Millau 10.5/ 20) 
 
Opposite his gastronomic restaurant, Samuel Albert has taken over a well-stocked brasserie, featuring traditional dishes made from local produce. Pot au feu, boeuf bourguignon and pike-perch with local beurre blanc are all prepared with precision in a convivial atmosphere; the daily menu at 32€ offers good value for money, with a terrine of the moment or a leek vinaigrette, salmon with sorrel or Maine poultry before a chocolate mousse or panna cotta; the extensive wine list, classified by grape variety, includes a good 15 wines by the glass, with oenological commentary.

Kalk&Kegel, an Austrian Gourmet Journal, just released a list of the most influential Austrian winemakers in 2024. There names should not be missing from any wine list. The list was compiled by about 30 of Austria's best sommeliers.  

Criteria for the inclusion in the KALK&KEGEL list, which has been published once a year since 2021, are the unmistakable craftsmanship of the winegrowers and the exemplary attitude towards nature, which in almost all cases requires at least organic certification or very often biodynamic certification.

2024 Loire by ombiasy Wine Tours, led by Annette Schiller, took place from Sunday, June 9 to Thursday June 20, 2024. The tour started in Nantes and ended in Sancerre.

There is a lot of focus on natural, organic, biodynamic and low-intervention winemaking in the Loire valley. One of the leaders of this movement is Liv Vincendeau from Domäne Vincendeau in Rochefort-sur-Loire, Anjou.

Liv Vincendeau produces racy Chenin Blanc, two types of Rosé produced from a blend of traditional and autochthon grape varietals, a noble sweet Coteaux du Layon Rochefort, and spectacular Crémant de Loire. Her Crémant “Zeitlos” is raved about in every single top wine magazine. 

The domaine is certified biodynamic by Demeter.

When we arrived there, Liv hopped on our bus and took us to her vineyards, where we spent some time. After that we went back home for a seated tasting in her wine cellar.

In preparation of the Loire Valley Tour 2024 by ombiasy WineTours, Annette and I spent about 10 days in the Loire valley in February 2024.  The focus was on verifying hotels, meeting many wine domaine owners, checking out restaurants and finding the best travel routes. 

We went to all the domaines Annette plans to visit in June 2024 during the Loire Valley Tour 2024 by ombiasy WineTours. Typically, the visits were short, just a few minutes. 

One exception was Domäne Vincendeau, an estate in Anjou that began producing wines in 2014. At the helm of this small estate is a woman from Germany named Liv Vincendeau. During the past 10 years, Liv has made a name of herself in the Loire natural wine scene.

We met her twice, first at the Salon des Vins Grenier Saint Jean, a wine fair with natural wine producers at the Le Grenier Saint Jean in Angers and, second, as follow up a couple of days later at her estate in a little beautiful village called Rochefort sur Loire.

Born in Darmstadt, Germany, where I also grew up, I first went to study (Master II in chemistry) in York (UK) and Strassburg (Alsace). Arriving in Anjou in 2000 during viticulture-oenology training, I have remained faithful to this beautiful province ever since. Creating my own domain – a dream!... and then a carefully prepared project. Many winegrowers from France and elsewhere have passed on to me their know-how and their passion for this magnificent profession. I thank them wholeheartedly. 2014 is the year of implementation and since then each vintage is a new adventure.

Liv Vincendeau/ Raw Wine New York

Liv Vincendeau: I created the Domäne back in 2014 in a little beautiful village called Rochefort sur Loire. We are a 1.5 hours train ride South West of Paris.. Organic agriculture from day 1 because I grew up like that!. It is a philosophy, a way of life. Vineyards sitting on top of the hill south of the Loire, looking down on this beautiful river and receiving a wonderful climate with some ocean influence (Atlantic just 1 hour away). Very superficial and stony soil. Special Terroir, schiste, quartz, volcanic stones, ...Dry farming and 100% hand harvest. Horse power and sheep too. Mainly Chenin blanc but a bit of red grapes : Cabernet France and Grolleau Noir. We then started the biodynamic way of cultivating our land. Demeter certification followed in 2020. We are a family winery and are working with local & very motivated staff. Our credo is to make elegant, pure wines with love and a lot of attention to the detail. Introducing Liv Vincendeau! - Chambers Street Wines/ New York City

Chambers Street Wines (Eben Lillie): Earlier this year, while researching new winemakers in the Loire, I stumbled upon some information about Domäne Vincendeau, an estate in Anjou that began producing wines in 2014. At the helm of this new estate was not the usual 30-something French guy living in his van, but instead a woman from Germany named Liv Vincendeau, who settled in Rochefort-sur-Loire with her husband in 2013. I met Liv in January and was immediately impressed with her enthusiasm and friendliness. She was excited to share her wines, and explain the decisions she made in each vintage, and though she is a relative newcomer to the region, her knowledge about the grapes and soils of the Loire Valley was on par with any second or third generation winemaker I've met. In June I had a chance to visit her in Rochefort-sur-Loire, to see the vineyards and cellar. From high up on a hill above the Loire, we could see for miles, across the river to Savennieres in the distance. It's a great spot with good soils, and it was obvious to me that Liv had already developed a love for the place and the people, and a deep connection to her vines. 

Liv came to the Loire valley in the early 2000s, with the idea to study winemaking and eventually form her own domaine. In 2013, she and her husband discovered an old house for sale at the base of the Loire river in Rochefort-sur-Loire, and with a little research, Liv found a few small parcels above the town. She quickly got to work converting the vineyards to organic farming. In an effort to minimize their carbon footprint, she chose to work the soil with a horse instead of a tractor (and she even drives an electric car!).

Most of Liv's parcels are Chenin Blanc, ranging from 10-80 years old, some Cabernet Franc, Gamay, and a newly planted parcel of Grolleau that she's quite excited about. The sub-soil is mostly schist  (who doesn't love Chenin on schist?!) and the vineyards are littered with pieces of green and purple schist, quartz, and other mineral deposits. Winemaking is low-intervention, always indigenous yeast, with small amounts of sulfur added typically only at bottling. The wines are new classic expressions of the Loire, and we're proud to be able to share them with you!

Roni Selects (USA Importer)

Roni Selects: Liv Vincendeau came to the Loire in 2000 with the idea of studying winemaking and eventually having her own domain. She moved from Germany and eventually settled in Rochefort sur Loire when she and her husband found an old farmhouse for sale. Quickly she found a small parcel at the top of the town and immediately started the work of converting the vineyard to organic. Most of Liv’s parcels are Chenin Blanc, ranging from 10-80 year old vines. There is some Cabernet Franc, Gamay and Grolleau. The soil is mostly schist with mineral deposits scattered all over the vineyard. Liv believes in low-interventionist winemaking using naturally occurring yeast and minimal sulphur.

we went to Domaine de la Soucherie in Beaulieu-sur-Layon, Anjou, were we were greeted by the Director, Vianney de Tastes. The view from the château over the valley in the distance was breathtakingly gorgeous.

Alexandrine Marie toured with us the domaine and hosted us for a charcuterie and cheese lunch with a tasting of the Domaine de la Soucherie wines.

The Château Soucherie may be the most physically beautiful property of all the domaines with which we work. The house itself is a unique architectural gem that sits on a rise overlooking the vineyards that snake down towards the Layon river. My first visit at the estate was in early 1982, a frigid, damp day that I will remember forever. I was exploring the truly verdant slopes and valleys of the Layon region, intensely “green” no matter the season, in search of that special regional version of Chenin Blanc that, at its best, can be one of the most compelling of wines. My research led me to Soucherie and I was greeted by the ebullient presence of the proprietaire, Pierre-Yves Tijou. On that cold day, with the winter chill surging through the earth and cement floor of the chai installing itself deep in my bones, the warmth and graciousness and simple good cheer of Monsieur Tijou leavened the frost and coddled the body. Thirty years later we remain friends.

That day I was introduced to the complex and savory nature of these wines born of the Layon and its marriage to the noble Chenin Blanc. For every year since, we have been engaged with this magnificent domaine and its dry and sweet versions of wines of the Coteaux du Layon and of Savennieres. As well, there are the simple and satisfying reds and rosés that render the fruits of the local Cabernet Franc and Grolleau … overall a quite complete vinous experience.

As life would have it on occasion, not everything goes according to plan. During the early part of the decade of 2000, Pierre-Yves took ill and the stress of his recovery pushed him to sell this magnificent domaine to give his son and successor, Mathieu, the freedom to “downsize” and control his destiny. The Tijous thus acquired a neighboring estate, the Chateau L’Eperonniere, that belonged to Mathieu’s uncle and sold Soucherie to Roger Beguinot. The transition for all may have been psychologically difficult but the end result for us was the ability to continue to work with Château Soucherie and add the wines of Château L’Eperonniere to our portfolio, an utterly satisfying result made even more pleasing by the eventual recovery that Pierre-Yves made to return to good health. So, a difficult story turns out to have a lovely ending.

Under Roger Beguinot’s direction, the buildings and the vineyards have been renovated and this 36 hectare property is more exquisite than ever before. Four of the thirty-six hectares are situated in the prime vineyard of Chaume and then two hectares are in Savennieres in a single-vineyard known as “Clos des Perrieres”. The remaining vineyards which encircle the chateau are in the Anjou and Coteaux du Layon appellations. Soucherie is surrounded by the villages of Rochefort-sur-Loire, Beaulieu-sur-Layon and Saint Lambert du Lattay. The soils are principally limestone, clay and schist.

Beguinot’s assistant, the maitre de chai, is the young Thibaud Boudignon who is leading the charge towards 100% organic viticulture through the principles of “agriculture integrée”. The domaine is divided into a series of single-vineyard sites, several of which are isolated to produce “lieu-dit” denominated wines.

Cet industriel a connu le succès dans l'agroalimentaire et a décidé de vouer son énergie aux 28 ha de vignes réparties en appellations anjou, savennières (1,80 ha au Clos des Perrières), coteaux-du-layon et chaume (4 ha). Les vins seront certifiés bio à partir du millésime 2022.

Domaine de la Soucherie in Beaulieu-sur-Layon, Anjou

The viticultural domaine is part of the Château Soucherie which was originally a farm owned by the Duke of Brissac. He built this château as a leisure place. 

In 2007 the château was acquired by Roger-François Béguinot, who made his fortune in infant nutrition. The beautiful château and the winery sit on a high point above the Layon river. The 70 acres of vineyards are immediately around the château on gentle south-facing slopes running down to the river. The soils are various types of schist. 

A wide variety of wines is produced: the whites from Chenin Blanc: a noble sweet Côteaux du Layon, an
every day Anjou Blanc, a top Chaume 1er Cru, and a top Savennières “Clos des Perrières”. Grape varieties planted are Gamay, Grolleau, Cabernet Franc for the reds and Chenin (94%) and Chardonnay (6%) for the whites.

we went to Clotilde Legrand, Domaine Legrand, in Varrains, Anjou.

Clotilde was our host. Following a portfolio tasting, Clotilde took us to her old wine cellar, where she ages her wines both in barrel and bottle, before releasing them. Following her father, Clotilde tends to keep her wines for an extended period before putting them on the market. Thus, the wines we tasted were mostly 2011, 2014 and 2015.

Clotilde Legrand is represented in the USA by Weygandt Metzler. 

Clotilde Legrand - Domaine Legrand in Varrains, Anjou

The Legrand family can trace their wine grower history back to the 17 th century. In 2014 the first women – Clotilde Legrand – took over and has since become an icon in the Saumur-Champigny appellation. 

The domaine farms 44 acres, mostly planted with Cabernet-Franc, and a tiny parcel with Chenin Blanc. The vineyards are divided into about twenty plots spread out over the villages of Saumur, Dampierre, Chacé, Varrains, and Souzay-Champigny. The average age of the vines is 45 years, with the oldest being
planted in 1927. The soils are clay-limestone and these produce the best Saumur-Champigny wines. 

In Saumur, the vines grow on gentle slopes which are traditionally enclosed by walls, hence a “Clos”. These tufa (the local name) walls ensure optimal maturation of the grapes through their protection and brightness. 

All fruit is harvested manually, fermentation is spontaneously, followed by malolactic fermentation and
ageing 2 to 4 years in French oak of which is 1/3 new. The vinification is dome without adding sulfites. There is no fining and filtering before bottling.

Weygandt Metzler

The Legrand family was one of earliest producers of the Saumur-Champigny appellation, and has a history with winegrowing dating back to the 17th century. In 2014, Clotilde became the Legrand family's first female winegrower. Clotilde wishes, just as her father René-Noël had, to focus on the traditional aspect of vinification. Her main objective is to obtain high quality wines, every year, while respecting the characteristics of each vintage.

The vineyard is comprised of 17 hectares of Cabernet Franc divided up into twenty plots split between the villages of Saumur, Dampierre, Chacé, Varrains and Souzay-Champigny. The average vine-age is around 45 years. The oldest plots date back to 1927. A small plot of Chenin produces Saumur Blanc, a dry Chenin. In Saumur, vines grow on gentle slopes traditionally enclosed by walls - some old, some ancient. These freestone walls provide protection for the vines and allow for optimal brightness to aid maturation of the grapes. Vines planted in limestone and chalk soils produce the best Saumur-Champigny. For over 30 years, grass has been allowed to grow between the vine rows on all plots, for a more environmentally friendly approach.

Saumur is known for its limestone: the tufa. The first caves were dug by humans over a thousand years ago and make up a huge underground network. Over the centuries, these galleries (tunnels) were used as shelters for themselves or for livestock. At the end of the 19th century, some were even converted into mushroom factories. And over the millennia, the galleries have been used as a place for winemaking and have the advantage of providing ideal conditions for wine storage; high relative humidity and temperature being both fresh and constant (?12°C).

In the spirit of excellence the legendary 1947 vintage demonstrated, the Legrand family continues to craft both table-ready and cellar-ready wines, with traditional French oak barrel-ageing for the finest vintages.

2024 Loire by ombiasy Wine Tours, led by Annette Schiller, took place from Sunday, June 9 to Thursday June 20, 2024. The tour started in Nantes and ended in Sancerre.

We stayed two nights in Saumur at Hôtel Mercure Bord de Loire, a modern 4-star hotel located on an island in the Loire River with a gorgeous view towards the panorama of Saumur and the Château de Saumur.

Saumur is an incredibly beautiful town at the confluence of the Loire and Thouet rivers worth exploring. The pretty Château dates from the 14 th century, but Saumur is most known for its excellent cavalry school with its Cadre Noir, a counterpart of the Spanish riding school in the Hofburg in Vienna, its Crémant de Loire wines, and mushroom cultivation.

we went for dinner to Restaurant L’Essentiel. It is a Michelin-listed restaurant, located on the foot of Saumur's fairy-tale castle.

We had a wonderful walk from our hotel to the restaurant, dinner and walk back at night from the restaurant to our hotel, with spectacular views.

A setting full of character under the château, to showcase the meticulous and interesting work of chef Anthony Vaillant. In this well-appointed setting, the menu is always tempting, with progressive menus depending on the number of dishes. For €38, the sequence is pleasant, with scallops in carpaccio with kalamansi jelly and leek maki, veal with Colonnata bacon and sweet potato espuma, and a pear dessert with a successful vanilla mousse caramel beurre salé cookie. Classic cellar with regional selection.
 
Guide MICHELIN

Nestled at the foot of the castle, this beautiful tuffeau-stone house sports charming dining rooms (parquet floors, exposed rafters and bare stone walls) and peaceful little patios. Chef Anthony Vaillant crafts food in the zeitgeist, jazzed up by a scattering of deft creative touches: start with a medley of asparagus and green peas, enhanced by a citrus fruit flavoured dressing followed by fabulously fresh cod flanked by a curry sauce and velvety mashed potato. Extremely attentive service. Regional tipples take pride of place on the wine list. An enjoyable culinary experience!

2024 Loire by ombiasy Wine Tours, led by Annette Schiller, took place from Sunday, June 9 to Thursday June 20, 2024. The tour started in Nantes and ended in Sancerre.

The day started with a visit of one of the must-sees in this part of the Loire Valley, the spectacular Romanesque UNESCO classified Abbaye Royale de Fontevraud. Richard the Lionheart and his parents Eleonore of Aquitaine and Henry II are buried here.

As part of the pre-trip in February 2024 for the Loire Valley Tour 2024 by ombiasy WineTours in June, Annette and I stayed a night at the hotel of the Abbaye Royale de Fontevraud and had dinner at its high-end restaurant. Michelin-starred Chef Thibaut Ruggeri changes the menu on each full moon. We had the 47th menu. The set up is unique. The restaurant is in the cloister of the abbey. When we ate ther, there are only tables for 2 persons with the 2 chairs next to each other and all tables and guests facing the atrium - filled with an herb garden and an art work in the middle. A very special spiritual evening with mother nature, in terms of the ambiance, food and wines. Unfortunately, we did not return on the 2024 Loire Tour by ombiasy WineTours. See below.

L’ Abbey Royale de Fontevraud in Fontevraud

The abbey and the monastic order “Order Fontevraud” was founded by a preacher in 1101. The order was recognized as a religious community by the Bishop of Angers. It was a unique order as it was a double monastery: there were nuns and monks following the same rules. The French revolution put an end to the monastery. Luckily, for a long time the buildings served as prison and that saved the monastery from dilapidation. 

Still today the monastery is of high historic relevance: we visited to the tombs of the Plantagenêts who like no others shaped Frances’ history: The union of Henry II, Duke of Anjou, later the king of England and most powerful ruler of the Middle Ages, married Eleonor of Aquitaine, herself one of the most powerful women of her time. Because of this union large parts of France came under English rule – for wine lovers: Bordeaux and the Loire Valley were English for 300 years. Henry II, his wife and their two sons Richard Lionheart and John Lackland and daughter-in-law Isabella of Angoulême are
buried here.

Abbaye Royale de Fontevraud: If the stay at Fontevraud L'Ermitage offers a break of tranquility, the gastronomic table is the highlight of this beneficial experience, led by chef Thibaut Ruggeri, Bocuse d'Or, 1 Michelin star, 3 Gault&Millau toques, also awarded by the green star of sustainable gastronomy: “I see myself as a hermit cook. Deliberately away from the tumults of the world, I observe it, especially at night, to take its pulse. The moon, its rhythms and mysteries, inspire the renewal of my recipes: thus the unique Moon menu was born.” This personality is reminiscent of that of Robert d'Arbrissel, an itinerant and charismatic preacher who founded the Abbey in 1101.
 
Saumur in the Loire Valley

... One of the must-sees in this part of the Loire Valley is the spectacular Romanesque collection of buildings around the UNESCO classified  Abbey of Fontevraud. Just a 20-minute drive from Saumur, it’s the largest collection of medieval abbey buildings in Europe.

Fontevraud was founded in the early 12th century as both a monastery and a nunnery run by an abbess which was a pretty unusual arrangement. The 12th-century buildings originally housed the nuns and monks and also the sick, the lepers and prostitutes who had given up their profession. From 1804 to 1963 it was a prison, set up by Napoleon.

Today you can see the cloisters, the chapter house with its 16th-century murals, and the huge refectory which served as the dining room. There’s an ambitious arts programme, so walk through the various buildings to see paintings both old and new, videos and sculpture. You can also walk past the kitchen garden which is growing different and old varieties of fruit and vegetables.

The main building is the abbey church, a vast, high cavernous space filled with light. At one end lie the tombstone effigies of the Plantagenet royal family, testimony to the bond between England and France. 

You see the remarkably life-like Henry II, Count of Anjou and Duke of Normandy and King of England II, his wife Eleanor of Aquitaine, one of the most powerful and influential women of her time who died here in 1152 having become a nun, their son Richard the Lionheart and daughter-in-law Isabelle of Angoulême, Richard’s queen. There’s a good programme of concerts and shows throughout the year.

If you want to savor the peace and quiet after the visitors have gone and have a great and unusual hotel, book at Fontevraud l’Hôtel in what was once the St-Lazaire priory. It has been spectacularly converted with the former monastic cells making up the 54 guest rooms in different parts of the priory.

The design is clean and contemporary making extensive use of beautifully designed wooden furniture. There’s a strong sense of peace and tranquillity and you get a good night’s sleep from the quiet location – and the bespoke mattresses.

The dining room follows the simple, but infinitely sophisticated feel. Opening onto the cloister and extending into the chapter house, there's banquette seating around the walls while some tables look through the glass wall into the cloister.

The attention to detail is impressive; even the ceramics are specially commissioned from Charles Hair, a Franco-American ceramist who lives nearby. The cooking is superb from young Thibaut Ruggeri, using local ingredients from the region and the area. The Ibar has a great innovation – tables which are touch screens showing the history of the Abbey which is great for children.

365thingsIloveaboutfrance.com: While flipping through my Food & Wine magazine in Colorado, I came across an article entitled The Ten Best New Restaurants in France. Much to my delight, one of the restaurants happened to be situated directly on our planned cycling route. Too good to be true, I knew it was meant to be. I decided to splurge and booked a table for two at Fontevraud le Restaurant, in the Abbaye Royale de Fontevraud not far from Saumur.

Located in the cloister, and one time prison, of Europe’s largest abbey, young chef, Thibaut Ruggeri, (only 34-years-old), and winner of the 2013 Bocuse d’Or (an international gastronomic competition), serves up extremely stunning haute cuisine in an intimate and peaceful setting. The tables surround a courtyard filled with fresh and colorful herbs where the very kind and attentive wait staff trim and pick fresh ingredients for each course.

No doubt about it, Chef Ruggeri is an artist. Visually his plates are exquisite. I’m not sure I’ve ever seen such beautiful and creative plating. Our dinner was like an edible trip to a fine modern art museum. In addition to the freshly picked herbs, the chef uses local ingredients, like honey from the abbey’s bees and mushrooms grown in the limestone caves surrounding the abbey. While not every plate was a homerun on the palate and flavor sometime took a back seat to art, it was an unforgettable evening.

2024 Loire by ombiasy Wine Tours, led by Annette Schiller, took place from Sunday, June 9 to Thursday June 20, 2024. The tour started in Nantes and ended in Sancerre.

The day before we had dinner at Restaurant L’Essentiel, a Michelin-listed restaurant, located on the foot of Saumur's fairy-tale castle. We had a wonderful walk from our hotel to the restaurant, dinner and walk back at night from the restaurant to our hotel, with spectacular views.

Today, the bus drove us right to the castle and we had lunch at L’Orangerie a basic restaurant right in the the courtyard of the Château de Saumur. The location is stunning.

Soaring above the town’s rooftops, Saumur’s fairy-tale castle was largely built in the 13th century by Louis XI, and has served variously as a fortress for protection from the Normans, a Renaissance palace, a Protestant stronghold and an army barracks. Today it houses Saumur's municipal museum, whose exhibits include outstanding collections of faience (earthenware) and equestrian gear, housed in the adjacent abbey church.

2024 Loire by ombiasy Wine Tours, led by Annette Schiller, took place from Sunday, June 9 to Thursday June 20, 2024. The tour started in Nantes and ended in Sancerre.

At Domaine des Roches Neuves in Varrains, Anjou, we were received by Agathe and Louis Germain. Louis is the "next generation" winemaker of  Domaine des Roches Neuves, who joined the domaine 4 years ago, together with his wife Agathe. Agathe led the tasting. Louis showed us the winemaking facilities and spent some time with us in the vineyard.

Domaine des Roches Neuves is represented in the USA by Kermit Lynch Wine Merchant.

Annette Schiller: Domaine des Roches Neuves in Varrains, Anjou

Owner of this domaine of 70 acres is Thierry Germain. I quote our friend and importer of fine wines Heiner Lobenberg: “Thierry Germain can, without exaggeration, be counted among the greatest winemakers in the Loire. He masters the diversity of the Loire like only a few others.” 

Thierry comes from a family of winemakers from Bordeaux. In 1991 he decided to leave Bordeaux since he felt at that time that Bordeaux was boring for him and he started working in the Loire. In 1991 he bought the Domaine des Roches Neuves which was then a tiny winery and built it up to 70 acres. 

Thierry Germain is passionate about terroir and nature and immediately started to convert to organic viticulture. The domaine is certified biodynamic by Demeter since 2000. I recently had the 2016 Les Mémoires, Cabernet Franc, AOP Saumur-Champigny: just the right tannins, moderate alcohol level, incredibly beautiful floral character. Since then I fell in love with the Saumur- Champigny Cabernet-Franc.

Kermit Lynch Wine Merchant

Thierry Germain is one of the Loire Valley’s most pensive and ever-experimenting vignerons. Whereas some winemakers who can be described this way produce eccentric cuvées, Thierry’s Cabernet Franc bottlings are incredibly pure, pretty, and refined. They demonstrate how Saumur Champigny is among the world’s very best terroirs, alongside Chinon and Bourgueil, when discussing red wines made from this grape variety. 

Thierry has honed his craft over decades to get to this point. After moving from his native Saint-Émilion to Saumur in the 1990s, he trained with the legendary Foucault brothers of Clos Rougeard. Then he set off on his own, spending years tweaking his farming approach and earning the respect of the locals, who were initially skeptical of an outsider from Bordeaux. He has pursued organic and biodynamic viticulture for more than a decade, and it shows in the freshness and purity of his wines. —Tom Wolf

Domaine des Roches Neuves

(1) Thierry and Marie

In 1991, Marie and Thierry fell in love with the Domaine des Roches Neuves.

Thierry had already spent his entire life in the wine world. Originally from Bordeaux, he is in the sixth generation of winemakers in his family.

Marie and Thierry’s journey is filled with memorable encounters with wine personalities who inspired them and led them to build their own viticulture vision and wine style.

Their philosophy very clearly focuses on the living, which inspires them to create inseparable ties with the grapevine, its soil, and even animals.

(2) Louis

Louis, the eldest son, has accumulated a wide range of experience in the wine business.

He started by working in marketing for prestigious Champagne producers in France’s Bordeaux and Loire regions.

His desire to get closer to the land motivated him to continue his studies in viticulture and oenology, before heading off to New Zealand to work at an organic biodynamic estate.

He joined Domaine des Roches Neuves with his companion Agathe in 2020.

(3) Jeanne

Inheriting the family passion for horses, Jeanne has – since 2018 – held the reins for Ben and Comptesse, working the vineyard’s 4 hectares with animal traction tools.

Jeanne took her first steps as a winemaker in 2019 with her La Foulée vintage. Other vintages followed.

2024 Loire by ombiasy Wine Tours, led by Annette Schiller, took place from Sunday, June 9 to Thursday June 20, 2024. The tour started in Nantes and ended in Sancerre.
 
In Saumur, we visited Maison Bouvet-Ladubay, one of France’s leading Crémant de Loire producers.
 
We were received by the owner, Juliette Monmousseau and then enjoyed a tour and a tasting. 

Annette had established contact with Juliette at a winemaker dinner at the Michelin-starred Imperfecto by Enrique Limardo in Washington DC in 2023.

Kobrand Wine and Spirits is the US importer of Bouvet-Ladubay.

Maison Bouvet-Ladubay in Saumur

Maison Bouvet-Ladubay is one of France’s greatest producers of méthode traditionnelle sparkling wine. It is also one of the oldest sparkling wine producers in the Loire valley with a history of more than 170 years. 

In 1851 Etienne Bouvet and his wife, Celestine Ladubay purchased 8 km of underground tunnels in Saumur with the intention of turning them into cellars. By the 1870s, Etienne was exporting his wines to England, became an official supplier to the House of Lords, and had built a majestic château, a theater, and his own power plant to serve the estate. 

At the turn of the 19 th / 20 th century Bouvet Ladubay was one of the largest sparkling wine producers in the world with an annual production of 7 mio. bottles. 

The couple did not have any direct heirs and after their death the Monmousseau family acquired the estate. Today it is Juliette Monmousseau who runs the business. 

French wine law dictates that “Crémant” must be produced in the traditional method and that the bottles need to age a minimum of 9 months on the lees before disgorgement. Very often the Crémant spend many more months on the lees to enhance quality.

Lay and Wheeler: Bouvet-Ladubay 

Bouvet Ladubay is one of the oldest sparkling wine producers in the Loire valley, boasting over 170 years of history. Their Saumur base was established by Etienne Bouvet and his wife, Celestine Ladubay in 1851 when they purchased 8 km of underground tunnels with the intention of turning them into cellars. By the 1870s, Etienne was exporting his wines to England, became an official supplier to the House of Lords, and had built both a fine château and his own power plant to serve the domaine. cc

Kobrandt

In the heart of the Loire Valley, a UNESCO World Heritage Site, Bouvet Ladubay’s cellars lie in a tuffeau cave, a white limestone characteristic of the region, which is visited by some 40,000 tourists every year.
 
One of the remarkable characteristics of the Saumur region is its tuffeau caves, carved into the chalk hillsides to quarry this local limestone. Tuffeau was used to build the the renowned castles, abbeys, monuments, and cities of the Loire Valley. Wines have been aged in these caves since the end of the 19th century when the extraction of tuffeau drew to an end.

Bouvet Ladubay’s own cellars lie in such a cave, excavated 1,000 years ago by the Saint Florent monks, who quarried the chalk stone to build their abbey, La Belle d’Anjou, consecrated in 1040 and at its greatest influence in the 13th century. It was said that the monks of the abbey buried an immense treasure in the caves during the French Revolution. In 2002, Patrice Monmousseau commissioned a sculptor, Philippe Cormand, to create the piece of art the “Underground Cathedral”. He rendered 35 architectural fragments from castles, churches and cathedrals sculpted by stonemasons over the centuries, adding to the natural beauty of the 5-mile-long cellars. Light and sound now complement this tribute to 10 centuries of builders in the Loire Valley.

I was the only man at the "Women Wines on Wednesday"- Dinner at Restaurant Imperfecto by Enrique Limardo in Washington DC with Owner Juliette Monmousseau of Bouvet-Ladubay, a leading Crémant de Loire producer. Imperfecto by Enrique Limardo Sommelier Raquel Ortega Torres was our host. She was supported by Addie Lewis Mattingly of Kobrand Wine and Spirits, the importer of Bouvet-Ladubay. 

We were 15 women and 1 man. The dinner came to US$ 665 including tax and tip for Annette and me.
