Following a guided tour of Château de Rully and tasting at Domaine Rully wines, with Château de Rully Owner Count Raoul de Ternay, we drove to Hôtel Restaurant Le Chevreuil in Meursault, Côte de Beaune.

We stayed overnight there and had dinner at the excellent Restaurant Le Chevreuil. Before dinner, some of us took a walk through Meursault.

At Hotel Restaurant Le Chevreul in Meursault, Côte de Beaune

Hotel Restaurant Le Chevreul is a 3+ star old school hotel with restaurant in the historic center of Meursault, owned by wine Domaine Matrot. It is run by Eléonore Matrot and her husband Chef Tiago Araujo, who took over the hotel and the restaurant in 2011.

Hôtel Restaurant Le Chevreuil: Au coeur du village de Meursault, l'Hôtel Restaurant Le Chevreuil, anciennement connu sous le nom Restaurant de la Mère Daugier, est un établissement historique de la capitale des grands vins blancs de Bourgogne. Créé en 1866, cette institution accueillait la célèbre Paulée de Meursault au début du siècle dernier. Eléonore et Tiago, jeune couple ambitieux, a relevé le défi de redonner une jeunesse à cet établissement. Leur objectif : que vous passiez un moment de détente et de plaisir gustatif à la hauteur de la qualité des vins de Bourgogne.

Eléonore is the daughter of Pascale and Thierry Matrot from the well-known Domaine Matrot in Meursault. The Matrot domaine is one of the oldest estate-bottlers in Burgundy and one of the largest and most important properties in Meursault (22 hectares). 100% estate-bottling has been practiced at the domaine since Thierry's grandfather, Joseph Matrot, took it over in 1908.It is widely represented on the wine lists of France's greatest restaurants, and has been distributed in the United States for over thirty years.

Le Chevreuil: Tiago (“J'ai suivi des stages chez Troisgros, Au Chassagne et chez Bajade”) est un chef créatif et méticuleux. Il recherche de la précision dans ses plats. Les produits frais sont travaillés avec soin et passion dans le souci du respect des saveurs de chacun. Il vous propose également des plats bourguignons traditionnels et la fameuse terrine chaude de la mère Daugier, spécialité du restaurant depuis 1872. Issue d'une famille de vigneron, Eléonore est très attachée au terroir. La sélection des vins est à l'image de son amour pour la Bourgogne. Souriante, elle vous réserve un accueil chaleureux.

Bib Gourmand : Restaurant sélectionné par les inspecteurs du guide MICHELIN pour son très bon rapport qualité/prix. Repas hors boisson à moins de 33 € (37 € à Paris).

À la question : "Tradition ou modernité ?", le jeune couple qui tient cette institution locale semble avoir trouvé une réponse intéressante. Jugeons-en : côté cuisine, la tradition des lieux n'est jamais loin et l'on régale encore avec la fameuse "terrine chaude de la mère Daugier"– spécialité de la maison depuis 1870 ; le chef prépare aussi de bons plats au goût du jour, tout en équilibre de saveurs. Côté décor, c'est résolument moderne et dynamique, avec des trophées de chasse relookés et un beau mariage de matières... La voici, leur réponse : entre tradition et modernité, pourquoi choisir ?

Gault Millau Le Chevreuil 12/20

Une cuisine traditionnelle et créative selon les menus et les préférences. Les assiettes sont dressées avec un savoir-faire certain, et les compositions confirment les impressions ; le menu de saison a tout pour plaire, comme en témoignent la crème de fèves, la coxinha de cochon noir de Bigorre, le filet de canard laqué au miel, le nougat glacé en verrine. Les vins de l’appellation, bien sûr et quelques chassagnes pour les rouges…

Domaine Matrot

Domaine Matrot is a third generation family domaine right behind the church in Meursault. Today it is Thierry Matrot and his wife Pascale who run the estate. The domaine's white Meursault village wine is a blend of eleven different parcels from around the village; like Le Limozin and Les Pelles downslope of the premiers crus, Les Vireuils and Les Chevalières up behind the village towards Auxey-Duresses and a couple of clos inside the village of Meursault. For the reds Thierry Matrot points out the single most important thing, something he learnt from his father. In order to make good pinot noir low yields are essential. I quote: “You can make a very good white wine with the chardonnay at 50 hl/ha, like in 1999. But with pinot noir – above 40 hl/ha you can forget the terroir, forget the character of the wine. You can make a decent wine, but there will not be great quality.”
