Corso al Gusto: Outstanding Modern Italian Cooking at Biancalani in Frankfurt, with Chef Christoph Kubenz, Germany

In Frankfurt, Annette and I are members of a group of wine and food aficiniados that meets about once a month in a top restaurant. In January, we had dinner at Biancalani.

There were eight of us. We had 13 bottles of 9 different wines. We all had 5 courses. We spent Euro 140 including tax and tip per person.

Biancalani

Biancalani has a menu with 10 items on it (Corso al Gusto). The standard is that you choose 5 items for Euro 70. Each additional item is Euro 10. If you want less, you can also eat a la carte for Euro 15 per item.There are about 20 seats and an open kitchen. You can watch Chef Christoph Kubenz and his team prepare your food.

Chef Christoph Kubenz

Chef Christoph Kubenz is a Juan Amador disciple. All his career, Juan Amador was a Michelin-starred chef, including at Restaurant Amador in Langen the south of Frankfurt/ Germany with 3 Michelin stars and more recently at Restaurant Amador's Wirtshaus und Greißlerei in Vienna/ Austria with 2 Michelin stars.

Chef Christoph Kubenz cooking is obviously influenced by Juan Amador in that dishes are plated in a precise and transparent manner to let the main product be in focus. Christoph Kubenz at SchauMahl along with André Rickert at Weinsinn were among the first to showcase bistronomic cooking in Frankfurt.

Christoph Kubenz is among the best chefs in town. For a long period, he was the Chef at SchauMahl in Offenbach, where he earned 15 points in the Gault Millau.

In mid-2017, Chef Christoph Kubenz re-opened Biancalani and was immediately awarded 16 points in the Gault Millau 2018. That put him in the top 10 league in Frankfurt, with Lafleur (18 points), Carmelo Greco, Français and Lohninger (17 points), Erno’s Bistro, Gustav, Weinsinn and Schaumahl in Offenbach (16 points). With Carmelo Greco and Lohninger, Biancalani was in the group of restaurants that were downgraded in the Gault Millau 2019.

We programmed the dinner to end at midnight, when Johnny turned a year older. A few other people showed up for Johnny's birthday and we partied for another 2 to 3 hours.

INVITATION

L'Allemagne, avec 110.000 hectares de vignoble, est le plus petit des pays producteurs de vin parmi les plus importants en Europe - Espagne, France, Italie. Cependant, la viticulture en Allemagne a une longue tradition, remontant à l'époque romaine, il y a 2000 ans. Il existe aujourd'hui 13 régions viticoles produisant 9,25 millions d'hectolitres de vin.

Katja Appelt, head of the Weinakademiker Group in Frankfurt, Germany, organized an extensive Château Musar Tasting with well-known wine journalist Rudi Knoll. The tasting took place at Restaurant Margarete in the center of Frankfurt.

Weinakademiker/ Frankfurt

There are about 600 "Weinakademiker" in Germany, Switzerland and Austria. They all studied successfully at the Weinakademie Österreich and were awarded the title "Weinakademiker. The qualification is similar to the Wine & Spirit Education Trust level IV Diploma. Katja Appelt, who works at the VDP, the association of about 200 elite winemakers in Germany, is the head of the Weinakademiker group in Frankfurt.

Château Musar

Château Musar is in Ghazir, Lebanon, 24 kilometres north of the capital Beirut. The vieyards are in the Beqaa Valley, situated 40 km east of Beirut.

In 1930, at just 20 years old, Gaston Hochar founded Château Musar, inspired by Lebanon’s 6,000-year winemaking tradition and his travels in Bordeaux. His ‘wines with noblesse’ greatly impressed senior officers in the army following on from the French mandate of the 1920s. Major Ronald Barton, of Château Langoa-Barton, stationed in Lebanon during World War II became a great friend, strengthening the links between Château Musar and Bordeaux that remain to this day.

Serge Hochar, Gaston’s eldest son trained as a civil engineer, then decided to study oenology and with the encouragement of his father became a student of Emile Peynaud at the University of Oenology in Bordeaux. He became Château Musar's winemaker in 1959 and Decanter Magazine’s first ‘Man of the Year’ in 1984. Serge Hochar died in a swimming accident in Mexico in December 2014.

Serge had two sons: Gaston and Marc. Both studied engineering and worked in the banking sector. Gaston now manages the day-to-day running of Château Musar and Marc its commercial aspects.

The Hochar family’s philosophy of respect for the environment means that the 180 hectares of Musar vineyards are managed with minimal human interference and all the wines are made naturally.

Château Musar was the first producer in Lebanon to achieve organic certification for its vineyards in 2006. Most are located in the Bekaa Valley, cradled between two mountain ranges running parallel to Lebanon’s Mediterranean coastline. Vines have been cultivated here for at least 6,000 years: the Phoenicians (seafaring ancestors of the modern Lebanese) were instrumental in bringing vines and wines from Byblos across to all of the areas around the Mediterranean.

Flanked by snow-covered mountains, and nestled at 1000m (3,000 feet) above sea level, the serenely beautiful Bekaa Valley is blessed with 300 days of sunshine a year, fresh mountain breezes and an average temperature of 25°C (encompassing snowy winters and hot summers). Remote and unspoilt, the Musar vineyards were ‘organic’ by default before the term was coined.

All the grapes are hand-harvested by local Bedouins between August and October.

In the winery, ambient yeasts do the work of fermentation. The bare minimum of sulphur is used and the Château Musar Red wines are neither fined nor filtered.

Lebanon’s Western Bekaa Valley, a shallow, fertile basin, running between the Lebanon and Anti-Lebanon mountain ranges, has been home to the vine for 6,000 years.

Vineyards were commercially exploited here by the sea-faring ancestors of the modern Lebanese, who introduced viticulture to Greece, Egypt and Italy. The Greeks named them ‘Phoenicians’ after the purple dye (‘phoinikèia’) they made from seashells. Famed for being able to revive their cities rapidly after destruction, the Phoenicians inspired the legend of the Phoenix. The region’s wines are mentioned many times in the Bible (as in Hosea 14:7), and Cana, where Christ turned water into wine, is near the southern port of Tyre. Baalbek, originally devoted to Phoenician fertility god Baal, is also the site of a vast Roman temple to wine god Bacchus. French in origin, the Hochar family (pronounced ‘Hoshar’) arrived in Lebanon with the crusades and have remained there ever since.

The red wine, which is the best known is made from Cabernet Sauvignon, Cinsault, Carignan, Grenache, and Mourvèdre grapes in varying amounts each year. The whites are made from Obaideh (related to Chardonnay) and Merwah (related to Sémillon). Both wines contain classic Bordeaux grapes, however they are very different, as they are made in a natural wine style with significant bottle variation. The wines generally improve with age, both the red and whites.

Château Musar also produces a single vineyard wine, Hochar, which is similar to the red Musar but is oak aged for only 9 months, and can be drunk younger, as well as the Cuvée Musar range, both produced as a red, white and a rosé. Hochar Père et Fils is released earlier and can be used as an indication of what the Château Musar wine will be like. It is usually around half the price of the regular Château Musar. Château Musar has begun production of a restaurant range, Musar Mosaic, and a wine from their younger grapes, Musar Jeune.

Christian Schiller: This was a spectacular treat. The 1993 white was still crisp and full of flavour and the reds had the most amazing nose, layered texture and endless finish.

Château Mondésir Gazin in Plassac, next to Blaye, Bordeaux Right Bank, belongs to the so-called “petits châteaux”. There are many of these châteaux that produce excellent wines for a fraction of the price of the classified wines. Château Mondésir Gazin is one of them.

Owner/ Winemaker Marc Pasquet was our host.

We started in the vineyard, where Marc Pasquet talked with us about the challanges he was facing as an organic winemaker. From there, we moved on the winemaking facilities and the barrel cellar, before sitting donw in the modern tasting room. Here, Marc introducd us to his outstanding portfolio by pouring 6 wines.

Château Mondésir Gazin

Marc Pasquet: Situated in Plassac, this estate is called after two hillside vineyard parcels – “Gazin”, facing directly south, and “Mondésir”, overlooking the Gironde estuary. The natural beauty of this landscape and the extremely high quality of these terroirs, incited us to acquire this property in 1990. Over the past 25 years, we have been unrelentingly committed to the elaboration of wines fully expressing the characteristics of this microclimate.

35 acres of vineyards belong to the Château and consist of clayey-limestone slopes. The typical grape varieties used are Merlot, Cabernet-Sauvignon and Malbec. They use no chemical weed killers, no pesticides or anti-mold treatment. The grapes are always harvested entirely by hand. The extraction of the color and tannins is always smooth and slow.

Planting 7 acres with 7 400 stocks per hectare was a small revolution in the region. This guaranties an excellent ratio between quality and price.

The Wines


2015 Château Mondésir-Gazin Blaye Côtes de Bordeaux

Elite Wines: 65% Merlot, 35% Malbec. 35 years old vines on average. This wine shows a dark color, intense & profound nose of black fruits, spices, cedar, lead pencil, and spicy oak, in which it ages for 18 months, in 33% new barrels. More of the same flavors on the palate, in a full-bodied style, extremely round, juicy, & supple, with a tightly knit yet very ripe structure and concentration. Superb finish with hints of licorice.

2015 Château Mondésir-Gazin Blaye Côtes de Bordeaux "Bardon"

Elite Wines: 100% Malbec. “Bardon” is the name of the plot from which this 100% Bordeaux Malbec is crafted. Aged in for 22 months in barrels (50% new), this is one of only two 100% Malbecs produced from Bordeaux! This wine has a deep purple color & profound nose of black fruits, spices, cedar, lead pencil, and spicy oak. These same aromatic notes carry over on the palate, in a full-bodied style, extremely round, juicy, & supple, with a tightly knit yet very ripe structure and concentration.

Elite Wines: 100% Merlot. A deep ruby color, this full-bodied wine has loads of black fruit, spicy plum, vanilla, pine wood box and blackcurrant. On the palate, there is harmonious black fruit with notes of licorice, black currants, oak, and minerality. It has a supple finish with definite length in the mouth. Excellent with grilled steak.

Elite Wines: 90% Merlot, 10% Malbec. 18-20 months in oak barrels. Thickly textured, deeply colored, & scented with dark ripe fruit, spices, oak, licorice. Wrapped in an incredible balance and harmony, full-bodied, full-flavored.

A few weeks ago, German wine journalist Stuart Pigott published in the Frankfurter Allgemeine Sonntagszeitung his favorite German wines and favorite German wine makers of the year – in German (Frankfurter Allgemeine Sonntagszeitung, 26. November 2017).

Stuart Pigott

Stuart Pigott , born in the UK, was Berlin-based for more than 20 years. During this period, he emerged as the leading German wine writer, mostly writing in German, and focusing on German wine. Notably, since 2001, he’s been the wine columnist for the Frankfurter Allgemeine Zeitung (Germany’s equivalent of the New York Times or the South China Morning Post), and he’s even filmed three series for the acclaimed TV show Wine Wonder Germany for the public broadcast channel of Bavaria.

A few years ago, Stuart Pigott started to spend a lot of time in New York City, turning his attention to the global world of Riesling. His first major output of the move to New York City was a major book about Riesling in the world, which was published in June 2014: The Best White Wine on Earth: The Riesling Story.

Since 2016, Stuart is back in Germany, in the Frankfurt Area.

He also joined JamesSuckling.com as a contributing editor. He is in charge of the wines of Germany and Austria as well as the East Coast of the United States.

Winzer des Jahres - Winemaker of the Year: Christian Stahl, Winzerhof Stahl

When Christian Stahl took over in 2000 the winemaking responsibility at Winzerhof Stahl, the vineyard area totalled 1.5 hectares of this mixed farming estate. 18 years later, Stahl looks back on about 2,000 percent growth, which makes some world-famous German winemaker look pretty pale. Of course, that's not a compelling reason to give him this award. Decisive for this is the combination of this growth with the consistently first-class quality of the wines of Christian Stahl and his enormous innovation drive. Already a decade ago, he attracted attention with his groundbreaking expressive dry white wines from the much-vaunted Müller-Thurgau grape and the surprisingly lively and juicy Silvaner white wines. Since then he is also one of the best German producers of dry white wines from the varieties Sauvignon Blanc and Chardonnay, without imitating the French specialists. The 2017 Edelstahl barrel 500 bottling from these two varieties show a sensational harmony of ripe fruit, body, freshness and subtle oak notes from the new wooden barrel (each € 38, not yet on sale, can be reserved). No wonder that Stahl's wines are so successful in top-class gastronomy.

Entdeckung des Jahres – Discovery of the Year: Carolin Weiler, Weingut Weiler

How can it be that I did not know Weingut Weiler until recently? Carolin Weiler's father, Richard, is one of the more quiet people in the country, and Lorch in the Rheingau lies a long way behind the railway barrier in Rüdesheim, where most day trippers and tourists from the Rhine-Main area are turning back. However, Weingut Weiler makes racy Rieslings, such as the 2017 Lorcher Bodenthal Steinberg Quarzit with a lot of power with only 11% alcohol (Euro 12 from the farm) and very "herbe" Spätburgunder red wines, like the 2015 Assmannshäuser Höllenberg with fine floral notes and exciting spicy notes. Weiler is still studying at the Wine University in Geisenheim, and we will certainly hear a lot from her over the next few years, including through the documentary film "Weinweiblich", which premieres in the fall of 2019.

Aufsteiger des Jahres – Rising Star of the Year: Carolin Bergdolt, Weingut Bergdolt

With the brilliant Grand Crus Reiterpfad Achtmorgen Riesling GG and Mandelpfad Weissburgunder GG from the 2017 vintage, Carolin Bergolt has succeeded in making two serious white wine of the year candidates. Both (available for Euro 30 each) are of impressive fineness and elegance despite the considerable concentration of flavor. This raises the question of where else to find such filigree wines made from the Weissburgunder grape. But each of her wines, including the simple dry Riesling vom Graf (Euro 8.90), and the red Sptäburgunder bring this quality into the glass. Her very fine and unpretentious wines have it difficult in the media, because she never lets the big flag rattle in the social media wind and more generally this is not Bergdolt's thing. She focuses on perfecting her wines and trusts her inner strength to persuade alert professionals and interested consumers. She succeeds in doing this over and over. . 

Schaumwein des Jahres - Sekt of the Year: NV Sekt Reserve Brut, Reichsrat von Buhl

German sparkling wine was for a long time very successful in two market segments: on the one hand quite cheap brands, which flooded the market in huge amounts, and on the other hand small editions, high-quality, artisanal Winzersekte. For some years, however, Matthieu Kauffmann, the French director and winemaker of Weingut Reichsrat von Buhl, has succeeded in achieving considerable success in the mid-price segment. Until 2013, he was the cellar master of the Bollinger Champagne House. He combines the knowledge from there with Palatine grapes to create impressive sparkling wines such as the multi-layered and elegant sparkling wine Reserve Brut. His secret? Among other things, the small amount of sulfur, with which he brings the new Von Buhl Sekt on the market. This allows a development of great aromas, which we love.

Weißwein des Jahres - White Wine of the Year: 2017 Idig Riesling Großes Gewächs, Weingut Christmann

"The Colosseum among the German Rieslings," was my description of the Idig from Weingut Christmann, when during the 1990s Steffen Christmann received a lot of attentation with his dry Rieslings from the forgotten top location. Since then, he has significantly reduced the power of the wines, and they have gained a lot of originality. His Idig GG from the 2017 vintage represents a new climax for Weingut Christmann and the Pfalz thanks to its enormous mineral depth and a balance that still makes the wine taste delicate. The fine aromas reminiscent of mirabelle plum and apricot are the icing on the cake of this brilliant German white wine, which does not need to shy away from a comparison with dry whites from any other part of the wine world.

Rotwein des Jahres - Red Wine of the Year: 2015 Rüdesheimer Drachenstein Pinot Noir, Chat Sauvage

An estate in the Rheingau that focuses on Pinot Noir and some white Chadonnay? Really? Yes, that's exactly what the entrepreneur Günter Schulz from Hamburg created in the year 2000. With the 2005 vintage, the red wines of the house have gone a further step up in quality thanks to the work of new General Managerr Verena Schöttle: I can recommend all her wines (prices from 18 euros per bottle). At the top of this impressive portfolio is the 2015 Pinot Noir from the Drachenstein in Rüdesheim. As spicy as it is seducing with a firm structure in which mineral acidity and tart odors are wonderfully intertwined, it is reminiscent of a Burgundian Grand Cru with a correspondingly fat three-digit Euro price. The wine is just beginning to bring great joy, but still has its best years ahead of it.

Preis-Leistung des Jahres - Best Price/ Quality Ratio of the Year: 2017 St. Remigiusberg Riesling, Weingut Tesch

Some readers will wonder why we chose a dry Riesling for Euro 16.50 as the price/ quality wine of the year. Where are the wines for Euro 4.99? And in a country where many good earners love to shop at the discounter supermarket! But price/ quality has two sides, and the ratio between the two matters. The 2017 St. Remigiusberg Riesling by Martin Tesch, our winemaker of the year 2012, offers enormous character and fineness for this price. At the same time, many German Rieslings of this quality cost two to threefold now! As the impressive 2017 St. Remigiusberg Riesling continues to prove, this wine may taste dusty and slender, and have a screw cap (which some traditionalists still find awful), but can easily be put away for a decade.

La Table de Chaintré (1 star Michelin) is located in the center of Chaintré in the picturesque Mâconnais wine region. It is consistently delivering excellent and innovative dishes. This beautiful restaurant is a gem and a family affair: Chef is Sébastien Grospellier and his wife Floriane is the front of house manager. We talked to both of them after the lunch and visited the kitchen.

Wine Tastings, Vineyards, in France: This is about an outstanding restaurant sitting at the northern tip of the Beaujolais, in the village of Chaintré. There aren't many businesses in Chaintré, but gourmets and vignerons drive there because the food and the wine list are just excellent and every detail is perfect. The venue was long time ago a grocery store and it was turned into a restaurant by the previous manager of the place, Gérard Alonso. Sébastien Grospellier has worked previously in several high-end restaurants, with chefs like Joël Rebuchon, Jean-Paul Jeunet and Bernard Loiseau (he was working in the kitchen when he learnt about his tragic death). He quit his job as chef at Lisbon's Four Seasons in Portugal when he was told by Alonso that the restaurant in Chaintré was available. He moved in in 2007 with the goal to serve fresh products in a single menu that he would source himself, including the bread, which he makes at the restaurant.

La Table de Chaintré is closed on monday and tuesday so that Sébastien can go to the market in Lyons and buy there the best products for the week. He works in the kitchen with an assistant (here Nobu from Japan) and his wife Floriane takes care of the service. In much less time than usually needed, he got a star on the Michelin guide.

The village house where the restaurant sits is already very nice, with strikingly-pure lines, made with this beautiful type of stone found in that part of the Maconnais. Although Chaintré is just a village at the crossroads of Maconnais and Beaujolais, the clients come from a wide range of places, like Lyons, Switzerland (which is 45 minutes away), Burgundy, Jura (very close too). The divided highway next to Chaintré (5 minutes) makes it very easy to commute to. Sébastien Grospellier is a native of the region and even if he enjoyed working in other regions and abroad, he kept this particular place in a corner of his mind. He knew the Alonsos well, he used to come here regularly as a customer himself, and when it was for sale, he went for it, even though he wasn't looking for a restaurant then. This said, the restaurant had already gained some fame in the region, for its food as well as its wines, and he hadn't to build up the thing from scratch. He just made a lot of renovation, and the dining room was his design.

There is one single room in the restaurant, with an elaborate ceiling design which brings a soft light on the tables. Speaking of the tables, just enough seats for 25 people, because Sébastien Grospellier want to keep it this small. Floriane Grospellier, Sébastien's wife, does all the service by herself.

On the kitchen side they have trainees from time to time.

Before looking at the food and the wines, you must know that the excellent bread served here is made by Sébastien Grospellier himself right here at the restaurant, from organic wheat. I can tell you that he could make a living just by opening a boulangerie in Paris or any other major city...

The cuisine is centered on fresh products selected from the best producers for the fish, the meat and so on. Then every tuesday he drives to Lyons to buy fresh vegetables and fruits on the market as well as grocery products. He also buys special vegetables from Annie Bertin, an organic grower from Brittany who supplies demanding customers or restaurants throughout France.

At la Table de Chaintré there's a single menu named le Menu Découverte, for both lunch and dinner. There's no menu à la carte but this menu Découverte changes every week, along with the seasonal products found on the market and among his suppliers. They do have a formula for weekdays' lunch with entree plus dish but most people choose the menu Découverte because that's the whole concept of this restaurant and that's why they came here. The menu Découverte is a collection of successives dishes, about ten in all, starting with appetizers and entrees, then two dishes, one with fish and the other with meat, and cheese and desserts. You feel like you're having all these gustative experiences one after the other each one so refined and tasty. For example these days it's the truffle season and you find truffles in several of the dishes.

The wine list is in line with the freshness and quality of the food, I'll not list all the wines there but be ready for finding the best of artisan winemakers in the wine book, and this not only from Beaujolais but from all the French regions, randomly-picked names being Schueller, Prieuré Roch, Romanée Conti, Cossard, Valette, Anne Gros, Raveneau, Dard & Ribo, Jambon, Anglore, de Montille, Mugnier, Yquem, Chateau Margaux, Le Puy (yes, there are a few Bordeaux...) and many others... The wine list (extract) is not divided in white and reds but listed by producer, a letter ("b" or "r") indicating if it's a white (b) or a red (r). Makes more sense to me, the winemaker being more important than the color, and when you look for a particular vigneron, you may switch color when you fall upon another wine you didn't expect to see.

Speaking of wines, Sébastien Grospellier learnt a lot about them when he worked for Jean-Pierre Jeunet in Arbois, through his friend Stéphane Planche who is caviste there and who runs Les Jardins de Saint-Vincent, an online organic wine portal. From this time starting in 1999, he visited many vignerons in the region and further, and he knows personally 95 % of the people you find in his wine list. His own philosophy on the kitchen side, with no technological tricks, no substitutes or ready-made frozen products, makes him feel very close to all these people who don't correct their wines with additives. Like himself, they also like good food and partying, and he regularly shares good moments with them, either here in Beaujolais or in their own region. During the time he spent in famous Michelin-starred restaurants, he didn't see this same passion for wine, the sommeliers there being formatted by the mainstream wine-tasting schools where the attention is centered on prestigious labels and appellations, more than on the grower/winemaker's craft.

The Germany-North Tour 2019 by ombiasy WineTours - Quintessential German Riesling - will take place from April 29 - May 07, 2019.

Annette Schiller: During this tour we delve deep into German "Riesling Country" and will fully experience authentic Germany. We start the tour with a visit to the "Weinbörse", the annual exhibit of all wineries belonging to the Association of Premium German Wine Estates (VDP). Here you can do a tour d'horizon of all German wine regions and you can taste the portfolio of more than 200 wine estates. After this fabulous introduction we travel along the main wine arteries of Germany: the Rhine river, the Mosel river, and the Nahe river. Roman, medieval, and modern history accompany us all the way and will help us to understand what German wine is all about. The beauty of the landscape, the steep vineyards, the romantic Rhine valley, the quaint villages, the stories behind the wineries and their families, and the gorgeous wines we will taste at world-renowned wineries will give us a renewed understanding of German wines. In a nutshell: this is a German wine class on the ground.

We will visit a total of 18 wineries (14 are members of the VDP, the German association of elite wine makers) in 5 different wine regions where predominantly white grapes are planted: Rheingau, the jewel in the crown, with its perfect, fuller bodied, racy Rieslings; Mittelrhein where the Rieslings grow on the steep slopes of the fortress- and castle-ribboned banks of the Rhine river; Mosel with its dizzying steep vineyards and famous elegant Rieslings; Nahe and its serene, peaceful valley where perfect harmonious wines reflect their roots; we pay a visit to one of the up- and coming winemakers in the Rheinhessen region.

The 2018 American Wine Society Annual Meetings took place in Buffalo, New York State, from November 1 to 3, 2018. More than 500 members from all over the USA came to this 3-day event, filled with tastings, seminars and presentations.

Annette Schiller, President of ombiasy PR and WineTours and member of the American Wine Society, led 3 wine tastings - Abbey Wines, Pinot Noir from Germany and Burgundy, Rhône Valley - at the 2018 Annual Meetings of the American Wine Society.

In addition, Annette and Christian Schiller poured a selection of German premium wines - all from members of the VDP (Verband Deutscher Prädikatsweingüter), the about 200 elite wine producers in Germany - at the Showcase of Wines event during the second evening.

The American Wine Society

The American Wine Society was founded in 1967 as a non-profit, educational, consumer-oriented organization for those interested in learning more about all aspects of wine. On October 7, 1967, around 200 grape growers, home winemakers, and wine lovers gathered at Dr. Konstantin Frank’s vineyard on Keuka Lake near Hammondsport, NY for the AWS’ initial meeting.

In December of the same year, the thirteen charter members, led by Founder Dr. Konstantin Frank, met to determine the organization structure of AWS and elect officers. Now in its 49th year, the American Wine Society is the largest consumer based wine education organization in North America. Membership is open to anyone interested in wine and over 21 years of age.

In the early days, AWS members were located primarily in the eastern part of the country. As the society grew , we established chapters throughout the eastern U.S., then into the south and Midwest, and finally into western states. Today, the American Wine Society has over 5,000 members in 45 states and 120 chapters across the U.S.

Each November the Society hosts a three-day national conference with two full days of nearly 50 educational seminars to choose from. Winery owners, wine educators, and renowned wine makers are selected to present sessions during this national event. In addition, a program educating members to become AWS certified wine judges is conducted on the day preceding the seminars.

Seminar at the American Wine Society National Conference in Buffalo, New York State - Burgundy Pinot Noir and German Pinot Noir: Differences and Similarities

Annette Schiller: Germany is in the midst of a red wine revolution. Thirty years ago, red wine production amount to 10 percent of the wine produced, now it is almost 40 percent. Germany is now the third-largest producer world-wide of Pinot Noir. Burgundy and the German Pinot wine regions can look back on a long common history and both share a very similar soil profile. The Pinot Noir grape produces terroir-driven wines, and we will explore the similarities and differences of Pinot Noir from Burgundy and Germany.

Spätburgunder: Germany’s Answer to Burgundy (Wine Spectator, Nov 1, 2018)

Germany is so closely identified with Riesling that you may be surprised to learn that the country is the third-largest producer of Pinot Noir in the world, behind France and the United States, according to the Wines of Germany trade organization.

Germans call the grape Spätburgunder, which means late-ripening (spät) Pinot (Burgunder). Nearly all of the 13 German winemaking regions grow Pinot Noir, most notably Ahr (where Spätburgunder accounts for more than 50 percent of plantings), along with Baden, Franken and Württemberg.

I first tasted Germany’s Spätburgunders while working in retail a decade ago. At that time, there were few great examples, with some struggling for balance. But times have changed, for the better.

In my recent blind tastings in Wine Spectator’s New York office, the best of the new releases of Spätburgunder are perfectly ripe, with lively acidity as the hallmark feature. They show individuality and a sense of place. The use of new oak barrels has been dialed back, adding structure without masking the terroir, distinctive fragrance, lovely fruit and vibrant acidity.

We spent 2 weeks in Dakar/ Senegal to visit our daughter and her family. The visit was scheduled to coincide with the end of the 2019 Dakar Paris New Edition Rally (Interncontinental 2019), in which our son-in-law Chris Tremann participated. We wanted to be there when he arrived in Dakar after 2 weeks on the road through Africa. He and his partner finished the rally successfully (6th place), but unfortunately, the rally was overshadowed by a serious accident during the last day of the rally in Dakar.

During our visit of Dakar, Annette and I organized a tasting of premium German wines at Africa Gourmet in the Ngor District in Dakar. Africa Gourmet specializes in French wine, ranging from an entry-level Guigal Rhône Valley wine for less than Euro 10 to an aged Château Mouton Rothschild Magnum at more than Euro 1000 per bottle. Senegal being an islamic country, the clients of Africa Gourmet are essentially expatriates.

We were honored by the presence of the German Ambassador, Stephan Röken.

Kate Thomas: With its hot sandy streets, whitewashed mosques and bright flashes of color, Dakar beats to a different drum than other West African capitals. Spread out over a rocky peninsula, the year-round breeze carries the complex sound of mbalax music and the smell of piping hot thieboudjenne, the national dish. As sunset falls, thousands of Dakarois head to the beaches for open-air workout sessions, while in the bustling Medina area, women fry fish and plantains by the roadside. Fishermen haul in their catch in the shadow of sleek shopping malls, while men dressed in silky boubous stop for prayers and hawkers sell peanuts and wood carvings on every corner. Dakar is a city of contrasts, of gentle breezes and loud chatter, of colonial architecture and construction sites.

The Cuisine of Senegal, West Africa

The cuisine of Senegal is a West African cuisine influenced by North African, French, and Portuguese cuisine and derives from the nation's many ethnic groups, the largest being the Wolof. Islam, which first penetrated the region in the 11th century, also plays a role in the cuisine. Senegal was a colony of France until 1960. Because Senegal borders the Atlantic Ocean, fish is very important in Senegalese cooking. Chicken, lamb, peas, eggs, and beef are also used, but pork is not due to the nation’s largely Muslim population. Peanuts, the primary crop of Senegal, as well as couscous, white rice, sweet potatoes, lentils, black-eyed peas and various vegetables, are also incorporated into many recipes. Meats and vegetables are typically stewed or marinated in herbs and spices, and then poured over rice or couscous, or eaten with bread.

5 German Premium Wines

We poured 5 German premium wines, one red wine and 4 dry white wines.

We carried all the wines in our luggage to Senegal. The selection was determined by several factors:

Availability of wines in our cellar in Frankfurt.

We were looking for a good balance in terms of wine regions and grape varieties (we even poured a wine from the Saale Unstrut region in Saxony).

We wanted to showcase the new terroir-driven classification of Germany's wines. Thus we needed a Gutswein, an Ortswein and two Lagenweine (Premier cru and grand cru).

We only choose producers that we knew personally well and had visited on an ombiasy wine tour. Annette Schiller organizes winetours to Germany and France: Germany-North, Germany-South and Alsace, Germany-East, Bordeaux, Rhône Valley, Bourgogne including Champagne.

We started our journey through the Rhône Valley with a visit to one of the innovative and most dynamic winemaker of the “young and wild” Rhône Valley crowd: Éric Texier. He is a Bordeaux native and nuclear engineer by training. He fell in love with wine and looked for opportunities to buy vineyards in areas with top terroir. Eric farms biodynamically and now owns vineyards in Brézème and in Saint Julien en Saint Alban, both small appellations at the southern tip of the northern Rhône.

Éric Texier's wife Laurence was our host. They live in Charnay in the Beaujolais Region, north of Lyon, and have rented a place there were they make their wines. The vineyards, however, are located in the southern part of the Northern Rhône Region. The vineyards are there as well as winemaking facilities for the initial phases of winemaking. We met in Charnay in their wine cellar and tasted with Laurence 5 Texier wines, including one from barrel.

David Bowler: Éric Texier might not have been the most obvious candidate to become one of the Rhône Valley’s most dynamic winemakers: he is a Bordeaux native and nuclear engineer by trade. But he fell in love with wine, drawn particularly to the wines of some of the great, old-school vignerons in the Rhône (Gentaz, Trollat, Verset, Juge), Burgundy (Henri Goyard at Domaine de Roally, Jean-Marie Guffens at Maison Verget), Beaujolais (Chamonard) and Provence (Mas de Gourgonnier).

Bitten hard by the wine bug, Éric dumped the corporate-scientist life for one in vines and wines, starting with an internship with Guffens in 1993. By 1995, he and his wife Laurence and their two young children Texier family had moved into a house with a 16th-century underground wine cellar in Charnay in the southern Beaujolais and still home today—and Éric was bottling his first vintage.

At that early point, Éric was working closely with vignerons from whom he learned and purchased fruit. Having his own vines seemed an unattainable dream. But Éric’s favorite old-guard Rhône growers pointed him in the direction of a venerable old Syrah vineyard to the south but still technically part of the northern Rhône Valley: Brézème, a once-celebrated but by then long-neglected vineyard area in a remote area on the eastern side of the Rhône River, where the Drôme River joins it from the west.

The coteau has full southern exposure, 300 meters in elevation, limestone-rich clay soils and an increasingly steep aspect with rockier terrain as the slope rises. Back in the mid-1800’s, the wines of Brézème had rivalled those of Hermitage (20 miles to the north, also on the eastern side of the Rhône), in terms of reputation and price; it attained solo AOC status in the Côtes-du-Rhône zone back in 1943. But by 1961, Brézème and its ancient terraces of pre-clonal, old-variant Syrah known as Serine had largely been abandoned. Éric was fortunate enough to be introduced to the “godfather of Brézème”, François Pouchoulin. Pouchoulin almost singlehandedly kept the Brézème AOC alive for over 50 years via his family’s tiny property, the Domaine de Pergault. Éric fell in love with the area and its rich viticultural history. He began working with the fruit and eventually acquired several hectares of Syrah and Roussanne.

Éric was able to do the same in a similarly obscure, Syrah-rich Ardèche vineyard area: St. Julien-en-St.-Alban. It lies across the Rhône from Brézème, on the western side, 200 meters higher up at 500 meters, with completely different, granite-based soils and a warmer microclimate; here Éric also owns a mix of Syrah vines--including some Serine--as well as Marsanne.

Texier bottlings from the oldest red and white vines in Brézème and St. Julien en St. Alban bear the moniker “Domaine Pergaud”, an homage to Pouchoulin. There are also younger-vine (30-40-year-old) clonal Syrah-vine bottlings from Brézème and St. Julien. When he has to replant, it is always selection massale.

While the heart and soul of Texier wines is the wines from Brézème and St. Julien, Éric makes a number of other wines. The entry-level Côte-du-Rhône wines (“Adèle” being the white, “Chat Fou” the red and rosé) come largely from his own vines, including in Brézème and St. Julien but also from the Vaucluse. Additionally, he makes very small quantities of Châteaunuef-du-Pape and Côte-Rôtie with fruit from like-minded vignerons with whom he has collaborated for years. No matter the source, Éric’s priority and passion is purity. Over years of intensive study and experimentation, he has picked and chosen from various farming traditions and philosophies--organics, biodynamics and Fukuoka among others—to arrive at the best way to get out of the way of the purest expression of grape, place and vintage in his wines.  His own vineyards are certified-organic, but he rejects the use of copper and sulfur treatments (which are permitted in organics); he uses some of the plant-based preparations of biodynamics but rejects its animal-based ones. He encourages cover crops but no longer works the soils. Harvest is of course strictly by hand.

Éric’s feelings about is farming choices are strong--and strongly expressed as is his way--but they are not dogmatic. The same goes for his cellar practices. In his own words, he is “very old-school and very minimalist”, adapting the particulars for vintage variation. Éric’s attention to the most minute details from start to finish is exacting and exhaustive. Reds and white both are generally made with whole clusters; native-yeast fermentation; short macerations; very gentle pressing; little to no sulfur, and only at bottling if at all; vinification and aging in cement, steel and used oak (varying sizes, never new); no punching down and no racking for reds; extended lees contact with no bâtonnage for whites; and no fining or filtering. He is restless and willing to try new techniques (example: amphora-aging for Marsanne in 2015). The goal is finesse, not weight or power, which one senses in the fine acidity, the high-toned aromatics and the clean lines of his wines.

Generally pegged as part of the natural wine movement in France, Éric shrugs this and every other label off. He is an intellectual, a scientist, and a pragmatist with a clear-eyed, unapologetic take on his work:  "My wines are not "nice" or "fun". I believe that they express where they come from and truly show a sense of regional identity. They are clear and precise. I don't give a damn what people are drinking at hipster wine bars in Paris or what a 1000-Euro bottle of Bordeaux tastes like. I'm very happy that people like my grandma and François Pouchoulin, the father of Brézème, like them."

Brézème Blanc

100% Roussanne. Brézème is a small viticultural area 18 kilometers south of Valence. Like Hermitage and Crozes-Hermitage, Brézème sits on the eastern side of the Rhône but in the Ardèche, a less celebrated but increasingly, thanks to Téxier, a quality-driven growing area which includes many old vines. The soils are notably rich in limestone. His parcel of Roussanne is a southwest-facing clos, a true walled vineyard, with the biodynamically-farmed vines averaging 25 years old. For the Brézème Côtes-du-Rhône, Eric uses the youngest of them, planted in 2009. The fruit is hand-harvested and fermented as whole clusters with native yeasts in concrete tanks; the wine is also aged in concrete tank and bottled with only 30mg/liter of sulfur at bottling.

Roussanne is an uncommon, difficult varietal which ripens late, yields unevenly and suffers powdery mildew readily. Not surprisingly, its plantings declined over decades, but it is experiencing a Rhône revival, helped along by Téxier in fact. When grown and vinified with meticulous care, Roussanne can produce a rich, complex, age-worthy wine. Eric is currently the only producer of Roussanne in Brézème, where he feels the cooler microclimate and soils help temper Roussanne's natural fruit confiture-like tendencies.

100% Syrah. St. Julien-en-St. Alban is a village and vineyard area at the southernmost edge of the northern Rhône Valley, on the western side of the Rhône River in the Ardèche. Its granite soils, higher altitude and greater overall warmth distinguish it from Texier's other main vineyard site in Brézème, across the Rhône on the east side with limestone soils and slightly cooler temperatures. As he does in Brézème, Eric owns a small parcel of vines of old Serine--the legendary and unique group of non-clonal, highly variable Syrah--which he farms organically and harvests by hand (as with all of his vines). The wine is made in the same way as Texier's others: whole clusters are fermented with native yeasts in concrete tank with a short one-week maceration . There is no punching down or other cap submersion (only a moistening of the cap with wine) in order to avoid overextraction. Unlike the younger-vine, concrete-aged St. Julien Syrah bottling, the Pergaud Serine is aged for about 30 months in old 2500-liter foudres and bottled with no sulfur.


Brézème Syrah Côtes-du-Rhône

100% Syrah. Brézème is an historic Syrah growing area at the southernmost edge of the northern Rhône Valley, on the eastern side of the Rhône River in the Drôme, near the start of the Alps It is a steep, south-facing hill rich in limestone and old vine terraces. Eric owns some old Serine parcels, as well as some younger clonal Syrah plantings going back 30 to 40 years. For this Côtes-du-Rhône bottling, Texier only this younger, clonal Syrah. The fruit is organically farmed and harvested by hand. Whole clusters are fermented with native yeasts in concrete tank with a short one-week maceration . There is no punching down or other cap submersion (only a moistening of the cap with wine) in order to avoid overextraction. The wine is aged in concrete for 15 months and bottled without filtration and with a miniscule10 mg/liter of sulfur.

While the other three estates are all considered to be at the world-class level (and are VDP members, the association of about 200 German elite winemakers), Weingut Siener is a step below with 3/5 grapes in the Gault Millau WeinGuide 2019. Most of the wines are sold at the winery itself with exports accounting only for a small part of the output. Against this backgound, Weingut Siener produces most interesting, highly sought, high quality wines at a price point below that of the other three producers we visited in the Pfalz. Peter Siener's wines are like him character heads, occasionally a little stubborn, but unmistakable, with a lot of backbone and always worth the patience. Power, acidity and length mate in a variety of ways in his wines, with freshness and tension. Peter Siener is as deeply-rooted in Birkweiler as his vines are rooted in the soils of the foothills of the Palatinate mountains. Besides his passion for his wines Peter Siener also loves cooking and is passionate about food. That explains the grip and power of his wines that are perfect to match with food.

The visit started with a glass of Weingut Peter Siener Sekt. Peter then took us on a tour of the famous Kastanienbusch and Mandelberg vineyards. We then sat down with Peter Siener in the courtyard of Weingut Siener for a Riesling Kastanienbusch and Pinot Noir Kastanienbusch vertical tasting comprising 5 vintages. Denise Siener served delicious local food from the Pfalz.

Weingut Siener

For three generations, the Weingut Siener has been all about family and wine. Peter and Denise and their daughters Paula and Helena live in a traditional Winzerhaus in Birkweiler.

Peter Siener is the third generation owner and winemaker at Weingut Siener. He took over from his father in 2000 and has since stepped hard on the accelerator to pursue quality with a vengeance. He also doubled the vineyard site and has holdings in two of the best vineyard sites of the southern Pfalz: the Kastanienbusch and the Mandelberg both in Birkweiler. Since Peter's entry into the winery, new approaches have been taken in reducing yields, developing wines and marketing, with great recognition and much success.. He belongs to the generation of the young, energetic winemakers in Germany who follow new paths to only produce the best of the best quality.

Today, the vineyard are totals 15 hectares in the single vineyards Kastanienbusch and Mandelberg (Birkweiler), as well as Sonnenberg (Leinsweiler). They are planted with the white varieties Riesling, Pinot Blanc, Pinot Gris, Chardonnay and Silvaner, as well as with the red varieties Pinot Noir, St. Laurent, Cabernet Sauvignon and Merlot.

The Siener wines are produced in 4 lines: Literwein, Gutswein, Erste Lage Wein and Grosse Lage Wein.

Bottle-fermented sparkling wines (Sekt) are also produced.

The winery is a member of the Vereinigung Südpfalz-Connexion and of FAIR'N GREEN.

In terms of exports, Weingut Siener wines are available in Switzerland, Norway, Holland and Hong Kong (at Chilled Wine).

After the vineyard tour, we drove back to the estate and sat down with Peter in the courtyard of Weingut Siener for a Riesling Kastanienbusch and Pinot Noir Kastanienbusch vertical tasting comprising 6 vintages. Denise Siener served delicious local food from the Pfalz. We started the tasting with a few other wines.

We then tasted 5 vintages of  Kastanienbusch Riesling.

Peter Siener: 1500 bottles per year. Slate. Low yield. Small, yellow berries. No need for green harvest. Old vines bring saltiness to the taste.

Peter Siener: Cool year. 36 hours pressing. 10 months on th lees. In stainless steel tanks. Good acidity. Fresh. Very mineral. Expect this wine to improve further.

2015 Weingut Siener Birkweiler Kastanienbusch, Schiefer, Riesling

Peter Siener:  Extremely hot year. 12 hours skin maceration. Riper. Less acidity. More voluptious. More opulent. 

2014 Weingut Siener Birkweiler Kastanienbusch, Schiefer, Riesling

Peter Siener: 40 hours skin maceration. Long time on the lees. 40% in used tonneaux. Is a bit closed now. Lots of herbs. Creamy.

2012 Weingut Siener Birkweiler Kastanienbusch, Schiefer, Riesling

Peter Siener: Fantastic year in the Pfalz. Harvested in November. Stainless steel. Mineral, spicy, elegant. Tannins well integrated. Perfect.

2011 Weingut Siener Birkweiler Kastanienbusch, Schiefer, Riesling

Peter Siener: Warm year. 12 hours skin maceration. Alcohol is in the forefront. Much less minerality than all the other vintages. Broad. Fat. Petrol at the end.

6 Kastanienbusch Pinot Noir and Spätburgunder

Peter Siener: Green harvest. Very low yield. 14% alcohol. 100% in new barrique. Wood well integrated. Fine tannins. Silky with lots of power.

Peter Siener: Green harvest. Very low yield. 100% in new barrique. THE year for Pinot Noir. Pinot Noir at its best. Very well made.

Peter Siener: Brownish in the glass. Dry tannins at the back. Less complex than 2013 and 2014. 

2011 Weingut Siener Birkweiler Kastanienbusch, Spätburgunder

Peter Siener: Open vat fermentation. First  time without pumping. Lighter. Elegant. Lots of strawberry notes on the nose.

2009 Weingut Siener Birkweiler Kastanienbusch, Spätburgunder

Peter Siener: Hot year. Fat. Not enough acidity. The grapes were harvested too late. Opulent. Lacks elegance. Very massiv.

Peter Siener: Very cold year. 100% in barrique. No brownish notes in the colour. Very fresh, young.

The Washingtonian is a monthly magazine distributed in the Washington, D.C. area. The magazine describes itself as "The Magazine Washington Lives By". Once a year, the Washingtonian releases a list of Washington's 100 best restaurants. The 2019 list was released a few days ago. Below you find the top 25 restaurants of the 2019 Washingtonian list.

The Washingtonian: Our 2019 Very Best Restaurants list hits newsstands this week, and we’re so excited for you to check it out. The list is a culmination of nearly a year of research (and by that I mean eating and drinking), hundreds of miles of driving, and a whole lot of careful consideration and debate. We visited over 300 restaurants in DC, Maryland, and Virginia.

As in the past, we’ve ranked all 100 of the restaurants (the “we” in this case refers to me, Anna Spiegel, Jessica Sidman, and Cynthia Hacinli). So who’s number one? That honor goes to Minibar, Jose Andres’s wildly creative (and yes, wildly expensive) tasting room/lab in Penn Quarter. The place has been around for 15 years, but we were stunned at the mastery of every bite, which each brought together creativity and deliciousness—two things that don’t always go hand in hand.

Our top ten boasts both tried-and-true destinations (the Inn at Little Washington) and stunning newcomers (the omakase-only Sushi Nakazawa), plus plenty of places that don’t command blowout-dinner prices (have you tried that kimchee toast at Elle?).

In truth, we had about 120 places we were passionate and excited about. Narrowing the field was incredibly difficult, even given the fact that several closures—including Garrison, which shuttered just days before we went to press—left a slew of open slots. But with the help of a bunch of index cards, hours of energetic discussion, and an All-Purpose buffalo-chicken pizza, we pulled through.

Onward to the top 25!

1. Minibar: At José Andrés’s newly redone tasting room, chef Jorge Hernandez leads a 28-odd-dish progression that is surprising, thrilling, and above all, very delicious.

2. The Dabney: Jeremiah Langhorne uses mid-Atlantic and Southern flavors as a springboard, then makes magic in his Shaw restaurant’s giant hearth.

3. The Inn at Little Washington: For lovers of luxe mod-American dining and whimsical touches—a four-star popsicle, truffle-laden popcorn—there is no better place to celebrate than Patrick O’Connell’s Rappahannock County hideaway.

4. Sushi Nakazawa: Its Trump Hotel location might deter some, but they’re missing out on the city’s best sushi experience, an all-nigiri omakase.

5. Tail Up Goat: We’ve never had a dull meal in this cozy Adams Morgan dining room run by three Komi vets.

6. Pineapple and Pearls: Tasting menus can sometimes feel like Sunday mass. Aaron Silverman’s Capitol Hill prix fixe place is the opposite—unfussy and fun.

7. Elle: It’s our favorite breakfast and lunch spot by day. By night, it turns out dreamy cocktails and plates both creative and comforting.

8. Komi: Johnny Monis and Anne Marler’s menu-free tasting room in a Dupont Circle rowhouse is wonderfully unpretentious.

9. Kinship: At the more casual of their two Shaw restaurants, Eric Ziebold and Celia Laurent serve luxe dishes with a range of influences, from the midwest to Japan.

10. Little Serow: Johnny Monis and Anne Marler’s $54-a-person Thai spot is one of the best values in the city.

11. Inferno Pizzeria Napoletana: These Neapolitan pies are the best in the area, thanks to chef Tony Conte.

12. Spoken English: The standing-only, communal-table spot in Adams Morgan’s Line hotel turns out thrilling kushiyaki and whole roast duck.

13. Metier: Chef Eric Ziebold leans French at this subtly elegant Shaw tasting room, and Celia Laurent is the most gracious of hosts.

14. Del Mar: Fabio and Maria Trabocchi’s glittering Spanish dining room at the Wharf continues to wow us with opulent paellas and small plates.

15. Centrolina: Simple Italian dishes call for high quality ingredients and an assured chef. This CityCenterDC osteria has both.

16. Bad Saint: The Filipino cooking at this tiny spot is electric—and hallelujah, it’s just started taking reservations.

17. Himitsu: Kevin Tien’s Japanese-ish dishes are often brilliant, and the snug, macrame-hung space is a charmer.

18. Blue Duck Tavern: New chef Adam Howard has reinvigorated this Shaker-chic hotel dining room.

19. Sushi Taro: Washington has seen a boom in Japanese restaurants, but we can’t stay away from this 32 year-old institution’s sought-after omakase counter—or its half-price sushi happy hour.

20. Chloe: It’s a testament to Haidar Karoum’s finesse and skill that he can make a Bavarian sausage work on the same table as a delicate crudo and Lebanese hummus.

The Collegium Vini is an association of wine lovers in the greater Frankfurt area, founded in 1951, that meets regularly to taste wine together. This time, the Collegium Vini had invited 4 wine estates from the Mittelrhein to talk about steep slope wines, wines from vineyards with an inclination of more than say 50 degrees.

Two of the wine estates - Weingut Toni Jost from Bacharach (Cecilia Jost) and Weingut Matthias Müller (Johannes Müller) - were members of the VDP, the association of Germany's about 200 elite winemakers, and two wine estates - Weingut Philipps-Mühle in St. Goar (Thomas and Martin Philipps) and Weingut Heilig Grab from Boppard (Jonas Schoenberger) - were up-and-coming producers.

The evening, during which we tasted 20 wines, had 5 blocks.

(1) The evening started with Johannes Müller providing a general introduction to the Mittelrhein
(2) Thomas and Martin Philips reported about their recultivation efforts of a steep-slope wineyard.
(3) Cecilia Jost talked about the impliations of the height and the orientation of a vineyard.
(4) Jonas Schoeneberg introduced us to new machines that facilitate the work in steep-slope vineyards.
(5) In the middle of the evening we had a nice meal with 2 dinner wines. At the end, a fruity-sweet Spätlese was poured pour la route.

Mittelrhein

Beginning just below Bonn and extending about 100 km south along the banks of the Rhine, the Mittelrhein is a beautiful region of steep, terraced vineyards and some of the wine world's most splendid scenery, medieval castles and ruins clinging to rocky peaks, sites of ancient legends where Siegfried, Hagen and the Loreley seem to spring to life.

Nearly three quarters of the vineyards are planted with Riesling. Viticulture was established in the region by the Romans, once they had established the cities of Cologne (Colonia) and Bonn (Bonna). The region saw its heyday in medieval times, at a time when the Cistercian order built the Kloster Heisterbach abbey above Oberdollendorf. The small town of Bacharach is an ancient centre of the wine trade. The name of the town of Bacharach comes from the Roman "Baccara" = "Altar of Bacchus".

The Mittlerhein below St. Goarshausen is one of the few vineyards in the world where phylloxera has not yet struck. Small, family-run wineries are typical of the region. But winemaking in the Mittelrhein is shrinking at a rapid pace. Today, with 500 hectares vineyard area, it is less than 25% of what it was 100 years ago. The slopes are extremely steep, discouraging young winemakers to continue with the tradition of their fathers, while consumers are flooded with reasonably priced and good quality wines from all over the world. However, increasingly young and dynamic winemakers, such as those who joined us for the tasting, are successfully trying to reverse this trend.

This 8 night, 9 day tour starts with a visit to the “Weinbörse” in Mainz. The Weinbörse - closed to the general public, but I secured tickets for this terrific event - is the annual showcase of wine organized by the VDP (Association of Premium German Wine Estates) of all its 210 members. The new Gault Millau WeinGuide Deutschland – for 2019 – was published on November 13, 2018. It reviews on about 1000 pages more than 11.500 wines of 1065 wineries.

Its rating symbol for winemakers is a grape and Germany’s best winemakers are awarded one to five grapes. The wines are rated using the 1 to 100 points scale.

In the Gault Millau WeinGuide Deutschland 2019, seven wines got 100 points. None of them was a world famous noble-sweet wine. Three of them were dry white wines. Three of them were red wines. One of them was a Sekt.

"Time and again I'm being asked if the best German Pinot Noir can really compete with the top Pinot wines from Burgundy," says editor-in-chief Britta Wiegelmann. "My conviction is yes, absolutely. And precisely because they are not copies. The wines which were awarded 100 points this year tell us about their unique German terroir with breathtaking precision, finesse, harmony and emotion - and that's exactly why they rank equally among the world's greatest growths."

we drove back to Saint-Emilion and Pomerol and had lunch at La Terrasse Rouge, which is right next to Château Cheval Blanc. You also have a nice view of Pomerol. La Terrasse Rouge is part of Château La Dominique, Appellation Saimt-Emilion, Grand Cru Classé, in Saint-Emilion. La Terrasse Rouge is an impressive restaurant.

European Best Destinations

Saint-Emilion is not a sleepy village frozen in time. The largest wineries compete to offer visitors a unique unprecedented experience. This boldness has resulted in the realization of some great projects such as this fabulous restaurant designed by the famous French architect Jean Nouvel on the domaine de la Dominique. This is surely a perfect marriage and an incredible architectural boldness where modernity and authenticity form a very successful unique whole.

By climbing to the first floor where the restaurant is located, you will soon understand why this place is called La Terrasse Rouge (the Red Terrace). Much of the terrace is covered with beautiful red and shiny pebble glass. With the vineyards in sight, this incredible landscape is the perfect introduction to this very well equipped and welcoming restaurant.

Au Logis des Remparts is a very charming, well tended historic 3 + star, very upscale boutique hotel in the heart of UNESCO world heritage wine town Saint-Emilion with a stunning garden, beautiful views on the vineyards and a gorgeous outdoor pool.

We spent 2 weeks in Dakar/ Senegal to visit our daughter and her family. The visit was scheduled to coincide with the end of the 2019 Dakar Paris New Edition Rally (Interncontinental Rally 2019), in which our son-in-law Chris Tremann participated. We wanted to be there when he arrived in Dakar after 2 weeks on the road through Africa. He and his partner finished the rally successfully (6th place), but unfortunately, the rally was overshadowed by a serious accident during the last day of the rally in Dakar.

During our visit of Dakar, Annette and I organized a tasting of premium German wines at Africa Gourmet in the Ngor District in Dakar. Africa Gourmet specializes in French wine, ranging from an entry-level Guigal Rhône Valley wine for less than Euro 10 to an aged Château Mouton Rothschild Magnum at more than Euro 1000 per bottle. Senegal being an islamic country, the clients of Africa Gourmet are essentially expatriates. We were honored by the presence of the German Ambassador, Stephan Röken.

During my 30 years career at the IMF, I visited Senegal several times. I got first in contact with Dakar in 1983/84, when I was the fiscal economist in the IMF team that handled the adjustment program with Liberia, which is also in West Africa. We used to fly Pan Am New York, Dakar, Robertsfield in Liberia. Following the Liberia assignment, I moved to the Côte d'Ivoire team and visited many times Abidjan, the capital of Côte d'Ivoire. At that time Abidjan was the leading city in West Africa, ahead of Dakar. But things have changed. Abidjan has fallen back although it is recovering under President Ouattara. Dakar can look back to a long period of political stability while Abidjan has suffered severely from the civil war that brought the country down.

Stopping-over in Lisbon

We took TAP Air Portugal from Frankfurt to Dakar.



Going there, we had a lay-over of 7 hours in Lisbon and used the time to tour Lisbon.






Coming back, we stayed over-night in Lisbon. Our stay there coincided with a #winelover dinner in Lisbon, which we attended. The #winelover community was on its way to Madera to celebrate the 7th anniversary there.

Dakar, Senegal, West Africa

Kate Thomas: With its hot sandy streets, whitewashed mosques and bright flashes of color, Dakar beats to a different drum than other West African capitals. Spread out over a rocky peninsula, the year-round breeze carries the complex sound of mbalax music and the smell of piping hot thieboudjenne, the national dish. As sunset falls, thousands of Dakarois head to the beaches for open-air workout sessions, while in the bustling Medina area, women fry fish and plantains by the roadside. Fishermen haul in their catch in the shadow of sleek shopping malls, while men dressed in silky boubous stop for prayers and hawkers sell peanuts and wood carvings on every corner. Dakar is a city of contrasts, of gentle breezes and loud chatter, of colonial architecture and construction sites.

We stayed with my daugher Dr. Cornelia Schiller Tremann and her family at their comfortable Villa Le Patio in Dakar, halfway between the Plateau District and the Ngor District.

Most of the fuit we got from a small vendor around the corner. Sometimes Viatrix and Ernst came along when I did the fruit shopping.

At Hotel Chez Salim at Lac Rose

The tour ended at Lac Rose, about an hour north of Dakar by car. We stayed at Hotel Chez Salim.







Lac Rose and Salt

Lac Rose is separated only by some narrow dunes from the Atlantic Ocean and, as expected, its salt content is very high. Its salinity content compares to that of the Dead Sea. Its distinct pink colour is caused by the Dunaliella salina bacteria, which is attracted by the lake’s salt content. The bacteria produces a red pigment in order to absorb the sunlight, thus giving the lake its unique colour.

Vsiting the lake, you constantly see salt collectors working at the lake and the shores of Lac Rose are full of piles of collected salt. This salt is extracted by locals from the bottom of the lake using their hands, then placed into baskets it is transported to the shore where it is used mainly to preserve fish.

Lac Rose is not the only pink lake in the world. There are other lakes near Baku, Azerbaijan or in Jeddah, Saudi Arabia, but they are either small or not natural.








Intercontinental Rally (Paris Dakar New Edition) 2019

The Paris Dakar Rally is an annual rally raid organised by the Amaury Sport Organisation. Initially, since the inception in 1978 the rally was from Paris, France, to Dakar, Senegal, but due to security threats in Mauritania, which led to the cancellation of the 2008 rally, races since 2009 have been held in South America.

The Intercontinental Rally keeps the original Paris Dakar race alive. Chris and his partner Bo started in Paris and went to Spain, where the Intercontinental Rally 2019 officially began. It ended at Lac Rose, as all the previous Paris Dakar Rallies.
















The Cuisine of Senegal, West Africa

The cuisine of Senegal is a West African cuisine influenced by North African, French, and Portuguese cuisine and derives from the nation's many ethnic groups, the largest being the Wolof. Islam, which first penetrated the region in the 11th century, also plays a role in the cuisine. Senegal was a colony of France until 1960. Because Senegal borders the Atlantic Ocean, fish is very important in Senegalese cooking. Chicken, lamb, peas, eggs, and beef are also used, but pork is not due to the nation’s largely Muslim population. Peanuts, the primary crop of Senegal, as well as couscous, white rice, sweet potatoes, lentils, black-eyed peas and various vegetables, are also incorporated into many recipes. Meats and vegetables are typically stewed or marinated in herbs and spices, and then poured over rice or couscous, or eaten with bread.

foodrepublic.com: Few other restaurants in Dakar rival the view of the one at Hotel Sokhamon. Perched high above the Atlantic Ocean, this open-air restaurant and hotel feel like a sculptor’s fever dream. The hotel’s sandstone sculptures, glazed floors in rich, earthy colors and gently curved surfaces lead to a breezy restaurant with an inviting bar and an infinity pool that looks like it's pouring into the ocean far below. The menu is primarily comprised of grilled fish and ceviches rounded out by traditional Senegalese favorites like yassa and maffe. Service can be slow, but you won’t mind lingering with a cool gin and tonic in hand at this hidden oasis on the edge of the sea. Rooms here are beautifully designed and make for a perfect refuge at the end of the meal.

Lonely Planet: A friendly, garden-filled oasis that backs right onto the lake, Le Trarza has a mix of rooms: the best are spacious bungalows with tall ceilings and private terraces. You can arrange pirogue trips on the lake and other excursions. The restaurant, set on stilts over the lake, is worth a visit even if you don't stay here.

Restaurant la Marée Chez Adji

Dakareats.com: Nearly every guidebook and travel website for Senegal recommends La Marée, a seafood gem tucked at the far point of Les Almadies. And they all say basically the same thing:

“Popular with locals and tourists alike. Simple, fresh seafood dishes at a good price. Amazing ocean view. Go at sunset and split a platter of coques with friends.”

Those guidebooks and websites are absolutely right. La Marée deserves every bit of its don’t-miss-this reputation. Seafood lovers and adventurous eaters will go bonkers over their menu, which is very reasonably priced, but there are also plenty of old favorites for those who just want the Senegal version of fish (or grilled chicken) and chips.

To find La Marée, go to the Pointe des Almadies and look for the blue crêperie. Just to its left is a paved walkway leading between grills and shops all the way to the ocean. When you get to the end of the walkway, look left. Boom.

Pointe des Almadies is the westernmost point on the continent of Africa. Pointe des Almadies is located on the north-western end of the Cap Vert peninsula in Senegal. The American Embassy is there.

En séjour dans la capitale sénégalaise cet hiver, j’ai eu le plaisir de découvrir « Chez Fatou », le tout nouveau resto super branché. C’est pour le petit-déjeuner que je m’y suis rendue un dimanche matin. Ce restaurant se trouve sur la Corniche et les connaisseurs savent que tout spot qui se trouve sur la Corniche est plutôt bien situé. L’endroit a récemment été rénové après un changement de propriétaire.

Menú Degustación Chinamo Silvestre

We chose the Menú Degustación Chinamo Silvestre, a tribute to the culture and traditions of Costa Rica. It was excellent, full of surprises.

Chef/ Owner Santiago Fernández Benedetto joined us at the end of the dinner.

As for the wines, we did not opt for the proposed wines, but chose our own wines.

Restaurante Silvestre

table.skift.com: Santiago Fernández Benedetto, chef and owner of Restaurante Silvestre, who says that strategies like changing the menu constantly and playing with the seasons have been key for his team to continue working with local suppliers.

Restaurante Silvestre opened in August 2017 with a sophisticated tasting menu that combines storytelling and rich flavors. In a recent iteration of the tasting menu, each plate represented one of Costa Rica’s seven provinces with ingredients from that region.

Fernández has an interesting perspective on why Costa Rica, a country with such inherent abundance, has not emerged as a leader in the local culinary movement.

“We are blessed every year with everything we need without having to worry about strong seasons, hard weather, hurricanes, or wars that make for a culture to have a strong culinary background. Hardness is the key for culinary evolution…together with history, culture and many other factors,” he says.
