Following the tasting ofthe wines of Éric Texier with his wife Laurence in their ancient cellar in Charnay in the Beaujolais Region, north of Lyon, we returned to Lyon for dinner in a traditional bouchon. On the way home, we came by one of Lyon's famous mural paintings.Lyon is not only known for its gastronomy, its secret passageways (traboules), the Roman theatre or its old streets. Lyon is also known as one of the cities in the world with the most number mural paintings (frescos). Most of them are really good, but one, the most famous one, is totally amazing.
Lyon and its Bouchons
A bouchon is a type of restaurant found in Lyon, France, that serves traditional Lyonnaise cuisine, such as sausages, duck pâté or roast pork. Typically, the emphasis in a bouchon is not on haute cuisine but, rather, a convivial atmosphere and a personal relationship with the owner.
Originally, the husband would watch over the dining room and pour the wine (Beaujolais or Côtes du Rhône), while the wife cooked every day, family-style cuisine, centered on the offal and cooked meats which Lyon is famous for.
A meal in a bouchon is a "must" when in Lyon. On this tour, Annette picked Le Bouchon des Filles for the obligatory dinner.

Dans le style rétro-moderne d'un quartier qui bouge bien, voilà les filles ! C'est ouvert tous les soirs, et au déjeuner en fin de semaine, le menu est unique et généreux pour 27 €. Les saladiers gourmands pour commencer, avant la quenelle de brochet sauce crustacé, la croustille de boudin aux pommes, le saucisson pistaché ou les rognons de veau à la crème. Les desserts sont classiques et bien faits (cheesecake, moelleux chocolat beurre salé), l'accueil charmant. Et vous pouvez finir sur une chartreuse VEP !

Isabelle, Laura and Agathe took over this ancient bouchon six years ago, and it has been fully booked ever since. There is an electric atmosphere every evening as diners settle in for a meal of epic proportions. "We don't do two servings," explains Isabelle, "as it takes all evening to get through all the courses, and the idea here is not to be rushed - neither the chef nor the customers." For that reason, they don't offer a "dish of the day" or lighter set menu at lunch. Here, you go for the full bouchon experience: the starter, a défilé des saladiers arrives at your table with dishes of saucisse de Lyon, a mayonnaisy lentil salad, herrings and new potatoes and a crispy green salad. This is followed by, say, a succulent duck pot-au-feu or a slow-cooked stew of tender pig's cheeks, then "cervelle de canut", literally translated as "silk worker's brain", but actually creamy fromage blanc with herbs and shallots. Le tout étant très généreusement servi, attention si vous voulez réservez une place pour les délicieux desserts, mieux vaut zapper les entrées !
